i have posted quite a few pulao or biriyani recipes in my blog till now, but i keep getting this request for some instant or leftover recipe. well, i have posted several recipes in that category till now, and i will continue to do so in the future so. but this recipe is an interesting recipe and it touches both leftover and instant categories too. basically, it takes approximately 5-10 minutes to prepare this flavoured instant lunch box rice recipe with your leftover rice. in other words, i have specifically chosen 3 types of veggies as a flavouring agent and tossed them with leftover rice. apart from being instant and simple, it is also a complete meal with all the nutrients by adding the vegetable. hence, it can also be an ideal meal for those kids who are fussy eaters.

furthermore, some more additional tips, suggestions and variants to the instant lunch box rice recipes. firstly, there is no specific requirement for any type of rice for this recipe. you may use basmati, sona masuri and even ponni rice for this vegetable rice. however, ensure it is dry so that it does not add any moisture to the vegetable mix. secondly, i have specifically chosen individual vegetables and not mixed with each other so that they can be named with its vegetable. but you may very well mix with each other to make an alternative flavour. lastly, once the rice is prepared and loses its warmness, it may turn dry and hard. therefore, you may need to reheat it with some sprinkle of water on top of it.

for aloo rice:

  • 2 tbsp oil
  • ½ tsp mustard rice
  • ½ tsp cumin
  • pinch hing
  • ½ onion, finely chopped
  • 1 tsp ginger garlic paste
  • 1 potato, peel & cubed
  • ¼ tsp salt
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • 3 cup cooked rice
  • ½ tsp salt
  • 2 tbsp coriander, finely chopped
  • 1 tbsp lemon juice

for palak rice:

  • 1 cup palak / spinach
  • 2 chilli
  • ¼ cup water, for grinding
  • 2 tbsp oil
  • 1 tsp cumin
  • ½ inch cinnamon
  • 1 bay leaf
  • ½ onion, sliced
  • 1 tsp ginger garlic paste
  • ½ carrot, chopped
  • ½ capsicum, finely chopped
  • 3 cup cooked rice
  • ½ tsp garam masala
  • ½ tsp salt
  • 1 tbsp lemon juice

for carrot rice:

  • 2 tbsp oil
  • 2 bay leaf
  • 1 inch cinnamon
  • 1 tsp cumin
  • ½ onion, sliced
  • 1 tsp ginger garlic paste
  • 2 carrot, grated
  • 3 cup cooked rice
  • ¼ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp salt
  • 3 cup cooked rice
  • 2 tbsp coriander, finely chopped
  • 1 tbsp lemon juice

how to make aloo rice:

  • firstly, in a large wok heat 2 tbsp oil, add ½ tsp mustard rice, ½ tsp cumin and pinch hing. splutter the tempering.
  • add ½ onion, 1 tsp ginger garlic paste and saute slightly.
  • also add 1 potato, ¼ tsp salt and cook until the potato is cooked well.
  • further add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder and ½ tsp garam masala.
  • saute until the spices turn aromatic.
  • now add 3 cup of cooked rice and ½ tsp salt.
  • mix gently making sure all the spices are well combined.
  • add 2 tbsp coriander and 1 tbsp lemon juice. mix well.
  • finally, enjoy aloo rice recipe with raita or pack it in your lunch box.

how to make palak rice:

  • firstly, in a mixer jar take 1 cup palak, 2 chilli and ¼ cup water.
  • grind to smooth paste adding water if required. keep aside.
  • in a large wok, heat 2 tbsp oil. add 1 tsp cumin, ½ inch cinnamon and 1 bay leaf. saute until the spices turn aromatic.
  • now add ½ onion, 1 tsp ginger garlic paste and saute until the onions soften slightly.
  • add ½ carrot, ½ capsicum and saute keeping the veggies crunchy.
  • now add prepared palak paste and cook for 2 minutes or until the raw aroma goes.
  • further add 3 cup of cooked rice, ½ tsp garam masala and ½ tsp salt.
  • mix gently making sure all the spices are well combined.
  • add 1 tbsp lemon juice and mix well.
  • finally, enjoy palak rice recipe with raita or pack it in your lunch box.

how to make carrot rice:

  • firstly, in a large wok, heat 2 tbsp oil, add 2 bay leaf, 1 inch cinnamon and 1 tsp cumin. saute until the spices turn aromatic.

  • further, add 2 carrots and saute for 2 minutes or until the carrot softens slightly.
  • now add ¼ tsp turmeric, 1 tsp chilli powder and ½ tsp salt.
