chat masala recipe | chaat masala powder recipe | homemade chaat masala ingredients with detailed photo and video recipe. a flavoured and essential multipurpose spice mix powder recipe made with combination of dry spices. it is one of the all-purpose spice mix which is an important ingredient for many indian cuisine snacks or street food chaat recipes. in addition it has a long shelf life as it is made with dry roasting of spices and hence you can prepare it once and use it for a year.
i have posted quite a few spice mix masala powder till now, but i was getting several request for this all-purpose chat masala recipe. it was long pending from my side as i wasn’t sure with the right balance of the spices. typically my source for such kind of masala spice mix is the product ingredients section. generally you can easily figure out the quantity of each spice with ingredient list at the back of store-bought spice mix. but for chaat masala or even garam masala, it can be complicated. i had to test and trail with the quantity for this recipe until i got something similar to the store-bought ones. the tricky part was the pudina or mint flavour. it cannot be either too much or less which would derive the taste and flavour to other directions.
furthermore, i would also like to add some more additional tips, suggestions and variations to chat masala recipe. firstly, the spices have to be properly dry roasted without any moisture content in it. this helps to improve the shelf life of the spice mix. yet do not burn it and dry roast it in low to medium flame. secondly, in most of the store-bought chaat masala spice mix, there is a reference for black salt. i have not used it as it is generally not common to have it in our kitchen. if you have access to it, you can reduce the quantity or regular salt by 50% and use it in 1:1 ratio. lastly, for sourness i have used aamchur powder or dry mango powder. as an alternative, you can also use pomegranate powder for the same flavour and taste.

Ingredients
- ¼ cup cumin
- 2 tbsp coriander seeds
- 2 inch dry ginger
- 1 dried red chilli
- 2 tbsp black pepper
- ½ tsp clove
- ½ nutmeg
- 3 tbsp mint
- ¼ cup dry mango powder
- ½ tsp hing
- 1 tsp salt
Instructions
- firstly, in a heavy bottomed pan take ¼ cup cumin and 2 tbsp coriander seeds.
- dry roast on low flame until the spices turn aroamtic.
- transfer to a large plate to cool completley.
- in the same pan take 2 inch dry ginger, 1 dried red chilli, 2 tbsp black pepper, ½ tsp clove and ½ nutmeg.
- dry roast until the spices turn aromatic.
- transfer to the same plate allowing to cool compeltley.
- now take 3 tbsp mint and roast on very low flame.
- roast until the mint leaves turns crisp. you can alternatively sun dry until it turns crisp.
- transfer to the same plate, allowing to cool compeltley.
- once all the spices are cooled completley, transfer to a mixi jar.
- add ¼ cup dry mango powder, ½ tsp hing and 1 tsp salt.
- blend to fine powder making sure all the spices are powdered.
- finally, chaat masala is ready to prepare aloo chaat or chaat of your choice.

notes:
- firstly, make sure to dry roast the spices well, else the shelf life of masala blend will decrease.
- also, increase the amount of pepper for a heat kick.
- additionally, if you are not having access to mango powder you can use pomogranate seeds.
