well, i am a huge fan of maggi noodles recipes and from my school days, i am addicted to the taste of maggi masala powder. well during those days, i never thought that one day i will be posting a video recipe post on it. it took me a lot of effort to decode this recipe after so many attempts. to be honest, i am still not convinced with the maggi tastemaker i have shown here. i still feel it misses the authentic spice level, yet good enough for a healthy morning maggi noodles breakfast. on the other hand, i am very convinced with maggi masala e magic spice mix, which offers the same taste and flavour compared to the store-bought. you can easily add to any indian recipes including dry or gravy curries, rice pulao and any noodles recipes.

furthermore, i would like to add some more tips, suggestions and variations to the maggi masala powder recipe. firstly, both the spice mix is made without preservatives in it and hence the shelf life is less compared to the store-bought one. however, storing in an airtight container with less moisture contact will have a better shelf life. secondly, you may add the maggi masala magic to your noodles if you need more spice heat. you may also add it to rice-based pulao, but you may have to skip the cornflour while preparing it. lastly, the combination of spices used in it is very critical to get the best final result. hence i would not recommend trying this recipe if you do not have access to any one of the ingredients mentioned below.

  • ¼ cup coriander seeds
  • 2 tbsp cumin
  • 1 tsp fennel
  • ¼ tsp methi
  • 2 bay leaf
  • 1 inch cinnamon
  • 5 pod cardamom
  • 6 cloves
  • ½ tsp pepper
  • 1 tbsp chilli powder
  • ½ tsp turmeric
  • ½ tsp ginger powder
  • ½ tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp aamchur
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tsp corn flour

for noodles tastemaker:

  • 2 tbsp coriander powder

Instructions

  • firstly, in a pan take ¼ cup coriander seeds, 2 tbsp cumin, 1 tsp fennel and ¼ tsp methi.
  • also add 2 bay leaf, 1 inch cinnamon, 5 pods cardamom, 6 cloves and ½ tsp pepper.
  • roast on low flame until the spices turn aromatic. cool completely and transfer to the blender.
  • add 1 tbsp chilli powder, ½ tsp turmeric, ½ tsp ginger powder, ½ tsp garlic powder, 1 tsp onion powder, 1 tsp aamchur, 1 tsp sugar, ½ tsp salt and 1 tsp corn flour.
  • blend to fine powder making sure all the spices are well combined.
  • finally, maggi magic masala powder is ready to prepare sabzi.

maggi noodles tastemaker prepareation:

  • firstly, in a small bowl take 2 tbsp coriander powder, 1 tsp cumin powder, 1 tsp garam masala, ¼ tsp turmeric and 1 tsp chilli powder.
