with step by step photo and video recipe. chaat recipes are quite essential evening snacks recipes in cosmopolitan cities. it can be made with myriad ingredients and deep fried snacks, but almost all snacks require a topping of ragda to make it a lip-smacking snack. but ragda can be used as the main ingredient with topping sev to make a simple and tasty matar chaat recipe.

this recipe of ragda chaat recipe is an extension to my previous recipe of raga recipe, in which i had shown how to make ragda curry. as promised previously, i am sharing and dedicating an entire post for ragda chaat recipe. the recipe is easy and hassle free if you have the ragda gravy ready to use. i make this curry well ahead in advance and store it in the freezer as it is a source of many chaat recipes. i use the same ragda for samosa chaat, sev puri and even for the famous bangalore masala puri recipe. but the simple matar chaat is just icing on the cake as it does not require any fancy ingredients and can be made with easily available ingredients. moreover, i use the same ragda base for my day to day curries and make it as a side dish for roti and chapathi.

furthermore, i would like to add some easy and important tips and suggestions for a perfect ragda chaat recipe. firstly, while preparing the ragda, make sure you soak it for a minimum of 8 hours or overnight soaking. even though we pressure cook the matar, soaking makes it easy to cook. secondly, i personally like the combination of sweet and spicy flavour with my chaat recipes. hence i have added green chutney and imli chutney/sweet chutney for a flavour burst. but this can be ignored or can have just either one of them to match your taste preference. lastly, add finely chopped tomatoes or onions with nylon sev as its topping for chatpata taste. you can sprinkle some chaat masala for more taste.

Ingredients
  

for ragda:

  • 1 cup white peas / vatana / safed matar
  • 1 potato, peel & chop
  • ¼ tsp turmeric
  • ½ tsp salt
  • 3 cup water
  • 3 tsp oil
  • 1 onion, finely chopped
  • 1 tsp ginger garlic paste
  • 1 chilli, finely chopped
  • 1 tomato, finely chopped
  • ¼ tsp turmeric
  • ½ tsp kashmiri red chilli powder
  • ½ tsp coriander powder
  • ¼ tsp cumin powder / jeera powder
  • ¼ tsp garam masala
  • ¼ tsp salt
  • 2 tsp coriander , finely chopped

for chaat:

  • 2 tsp  green chutney
  • 2 tsp tamarind chutney
  • 2 tbsp onion, finely chopped
  • 2 tbsp tomato, finely chopped
  • 1 tbsp carrot, grated
  • pinch chilli powder
  • pinch chaat masala
  • pinch cumin powder / jeera powder
  • pinch salt
  • handful sev
  • 2 tsp coriander, finely chopped

Instructions
 

  • firstly prepare ragda with white peas.
  • top with 2 tsp green chutney and 2 tsp tamarind chutney.
  • also add 2 tbsp onion, 2 tbsp tomato and 1 tbsp carrot.
  • further add pinch of chilli powder, chaat masala, cumin powder and salt.
  • finally, top with sev, coriander leaves and serve ragda chaat.

how to make ragda chaat recipe with step by step photo:

  1. firstly, in a pressure cooker take 1 cup soaked white peas (vatana), 1 potato, ¼ tsp turmeric, ½ tsp salt and 3 cup water.

  2. pressure cook for 5 whistles or until white peas gets cooked completely.

  3. now in a large kadai heat 3 tsp oil and saute 1 onion, 1 tsp ginger garlic paste and 1 chilli.

  4. also, saute 1 tomato until it turns soft and mushy.

  5. furthermore add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ¼ tsp cumin powder, ¼ tsp garam masala and ¼ tsp salt.

  6. saute until the oil is released from the sides.

  7. now add boiled peas and mix well.

  8. boil for 5 minutes or until the spices are absorbed well.

  9. mash the peas and potato slightly, to thicken the consistency.

  10. also, add coriander leaves and mix well. ragda is ready.

  11. take a cup of ragda in a serving plate.

  12. top with 2 tsp green chutney and 2 tsp tamarind chutney.

notes:

  • firstly, soak white peas overnight, else it will be difficult to cook.
  • also, adjust the consistency of ragda to your preferences.
  • additionally, prepare the chaat just before serving, else the sev turns soggy.
  • finally, ragda chaat recipe tastes great when serving hot and spicy.
