Baby potatoes are tender and ideal for any curries. However, not mandatory, and if you do not have access to it, you can use normal potatoes and cut them into small sizes. Secondly, I have made this curry in the pressure cooker to hasten the cooking process. However, pressure cooking can be tricky so you can use the open cooking vessel to prepare it. There are myriad ways a potato curry recipe can be prepared. The most common way is to make it with just potatoes which are completely fine by themselves. Aloo Pyaz Recipe | Punjabi Aloo Pyaz Sabzi - Just 10 Mins
Ingredients
- ¼ cup oil
- 1 tsp cumin
- pinch hing
- 5 cloves garlic, finely chopped
- 2 onion, sliced
- ½ tsp turmeric
- 1 tsp chilli powder
- 1 tsp coriander powder
- 3 tomato, sliced
- 1 cup water
- 1 tsp salt
- ½ cup curd
- 10 baby potato, half
- 1 onion, cubed
- 2 tsp kasuri methi, crushed
- ½ tsp garam masala
- 2 tbsp coriander, chopped
Instructions
- Firstly, in a pressure cooker heat ¼ cup oil. Add 1 tsp cumin, pinch hing and splutter.
- Add 5 cloves garlic, 2 onion and saute well.
- Once the onion softens and changes colour, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder.
- Saute on low flame until the spices turn aromatic.
- Furthermore, add 3 tomatoes and saute making the tomato soft and mushy.
- Add 1 cup water, 1 tsp salt and mix well.
- Cover and pressure cook for 5 whistles.
- Once the pressure is released, blend it into smooth gravy.
- Also, add ½ cup curd and mix well.
- Now add 10 baby potatoes and 1 onion.
- Cover and pressure cook for 2 whitles or until the potatoes are cooked well.
- Add 2 tsp kasuri methi, ½ tsp garam masala and 2 tbsp coriander. Mix well.
- Finally, enjoy Aoo Pyaz Sabzi with roti and rice.

Notes:
- Firstly, I have blended the onion tomato gravy base. you can just mash if you prefer the coarse texture.
- Also, you can deep fry the aloo and then add it to the gravy base to enhance the flavour of the aloo.
- Additionally, the same recipe can be prepared in kadai. However the cooking time increases.
- Finally, Aloo Pyaz Sabzi Recipe tastes great when prepared with a generous amount of oil.
