Traditionally, lauki recipes are considered ‘boring’ or not-so-fancy recipes. The curry or dal recipes are only made when you run out of other options. But trust me, deep-fried bottle pakora, commonly known as dudhi na bhajiya, can only be used for fancy snack recipes. It is crisp and crunchy on the outside and moist inside. Therefore, these can also be served as a stuffing inside pav bread or sandwich slices. In addition, it can also be a perfect evening snack with a cup of tea or coffee.
Furthermore, here are some more related and additional tips, suggestions, and variations to the lauki pakora or dudhi na bhajiya recipe. Firstly, I grate the bottle gourd to make it fine as the first step. This would result in moist grated coconut; hence, squeeze it thoroughly so that all water content is discarded. Otherwise, it may take more besan to neutralise the wet content. Secondly, add rice flour to make the pakora crisper and crunchy. You may also add corn flour or corn starch to make it as crisp as rice flour. Lastly, the same pakora can also be made by adding other vegetables. Onions and chillies can also be added to the bottle gourd.

Ingredients
- ½ lauki / bottle gourd
- 1 onion, sliced
- few curry leaves
- 2 tbsp coriander, chopped
- 2 chilli, chopped
- pinch hing
- 1 tsp ginger paste
- ¼ tsp ajwain
- ½ tsp chilli powder
- ¼ tsp turmeric
- ½ tsp chaat masala
- 1 cup besan / gram flour
- ¼ cup rice flour
- ½ tsp salt
- oil, for frying
Instructions
- Firstly, peel the skin off ½ a lauki and grate it finely.
- Squeeze the juice and add grated lauki into the bowl.
- Also, add 1 onion, few curry leaves, 2 tbsp coriander, 2 chilli, pinch hing, 1 tsp ginger paste, ¼ tsp ajwain, ½ tsp chilli powder, ¼ tsp turmeric and ½ tsp chaat masala.
- Further add 1 cup besan, ¼ cup rice flour and ½ tsp salt.
- Squeeze and mix well, making sure everything is well combined.
- Keep squeezing and mix without adding any water.
- The water in the lauki is enough to form the dough. Add more besan if required.
- Now, drop the dough into hot oil, forming a random shape.
- Fry on medium flame, stirring occasionally.
- Fry until the pakoda turns golden brown and crisp.
- Finally, drain off the Lauki Pakora and enjoy with hot tea.
