flaky or lachha paratha is always my favourite type of paratha due to its layered texture. i guess if you have followed my blog it is very much evident with the types of lachha paratha i have posted till now. my previous post of masala lachha paratha was very well appreciated and i started to receive more and more requests to post different types of layered paratha. hence continuing the tradition, i am posting a unique spicy paratha recipe with pickle taste in each bite. the advantage of this paratha compared to others is you do not an extra topping of a pickle as a side dish. you may easily relish this paratha with a creamy yoghurt or curd to make it a complete meal.

furthermore, some more additional tips, suggestions and variants to the achari paratha recipe. firstly, if you are running short of time you may use the store-bought pickle masala instead of preparing it from scratch. as matter of fact, you can also use the actual pickle and mix it with dough rather than applying it while rolling. secondly, the dough is prepared with just wheat flour which makes it an ideal and healthy paratha. but to make it tastier, you may add a 1:1 ratio of wheat and plain flour. lastly, with the pickle masala you may also use other types of topping to the paratha. you may use tomato sauce, chutney, garam masala, schezwan sauce and goda masala.

Ingredients
  

for dough:

  • 3 cup wheat flour
  • ½ tsp ajwain
  • ½ tsp salt
  • water, for kneading
  • 2 tsp oil

for pickle masala:

  • 2 tsp mustard
  • 4 tsp coriander seeds
  • 2 tsp fennel
  • 1 tsp kalonji
  • 2 tsp cumin
  • 1 tsp pepper
  • ½ tsp methi
  • 4 dried red chilli
  • ½ tsp turmeric
  • 1 tsp aamchur
  • ½ tsp salt

for paratha:

  • ghee, for layering
  • wheat flour, for dusting
  • oil, for roasting

Instructions
 

how to make achari masala:

  • firstly, in a heavy-bottomed pan take 2 tsp mustard, 4 tsp coriander seeds, 2 tsp fennel, 1 tsp kalonji, 2 tsp cumin, 1 tsp pepper and ½ tsp methi.
  • also, add 4 dried red chilli and roast on low flame.
  • roast until the spices turn aromatic.
  • cool completely, and transfer to the mixi jar.
  • also add ½ tsp turmeric, 1 tsp aamchur and ½ tsp salt.
  • blend to a fine powder and achari masala is ready.

how to knead dough for layered paratha:

  • firstly, in a large bowl take 3 cup wheat flour, ½ tsp ajwain and ½ tsp salt.
  • mix well making sure everything is well combined.
  • now add 1 cup water and start to knead the dough.
  • also, add 2 tsp oil and knead to a smooth and soft dough.
  • cover and rest for 20 minutes.

how to fold for layered parantha:

  • after resting the dough for 20 minutes, continue to knead.
  • pinch a small ball sized dough and roll.
  • dust wheat flour and roll to thin thickness.
  • spread a tsp of ghee over the rolled roti.
  • also, sprinkle 1 tsp of prepared achari masala mix.
  • now fold zig-zag way and roll spiral.
  • sprinkle wheat flour and roll gently.
  • roll to slightly thick thickness sprinkling wheat flour if required.
  • now cook on hot tawa keeping the flame on medium.
  • roast both sides spreading oil on both sides.
  • cook until the paratha turns golden brown and layers separate.
  • finally, crush the achari paratha and enjoy with butter.
