lachha paratha recipe | lachha parantha recipe with step by step photo and video recipe. lachha paratha is a popular paratha recipe prepared in ease. it is very similar to kerala paratha however, taste different. there are many ways of preparing lachha parantha in india. however, i have showed, two simple way of creating perfect layers. lachha paratha doesn’t require more oil as of kerala parota.
initially, i use to believe that, lachha paratha and kerala paratha are same. however, they are completely different. i would say both are cousin parathas. the main difference is the flour, obliviously. while, in lachha paratha, we use 1:1 ratio of wheat and all purpose flour. where as, in malabar paratha, it is just plain flour with lot of oil. both the parathas are prepared with multi layers. perhaps it is the confusing part for most of them. also, laccha paratha is good for digestion compared to malabar paratha. because, the dough is prepared with just maida and is not good for digestion.
however, i personally like kerala paratha compared to lachha paratha. probably, because it is more flaky, crispy and fluffy. furthermore, it is also very popularly served in many restaurants in my home town. i still remember my college days lunch hour. my college canteen use to serve amazing parathas with either veg saagu or palak paneer. also, the sugar added in the dough would give nice caramelisation and beautiful colour. moreover, those flaky layers of paratha would trap good amount of curries in each dip.

Ingredients
for lachha paratha dough:
- 1 cup wheat flour / atta
- 1 cup maida / plain flour / all-purpose flour
- ¾ tsp salt
- 1 tsp sugar
- pinch of baking soda (optional)
- 2 tbsp oil
- ½ cup milk (warm)
- water as required (to knead)
for lachha paratha:
- ¼ cup wheat four / atta
- oil as required
Instructions
lachha paratha dough recipe:
- firstly, in a large mixing bowl, take maida and wheat flour.
- additionally, add salt, sugar, baking soda and a tsp of oil.
- furthermore, crumble well with your hands,
- now add milk and start to knead.
- add water as required and knead to smooth and soft dough.
- cover with moist cloth and rest for 30 minutes.
lachha paratha recipe:
- firstly, pinch a large sized ball dough, roll and flatten it.
- also dust with some wheat flour.
- furthermore, roll it into a thin circle as of chapathi. roll as thin as possible.
- grease the chapathi with oil and sprinkle wheat flour over it.
- now start creating pleats by folding with the help of fingers.
- stretch the pleated dough as much as possible.
- begin to roll the pleated dough like a swiss roll.
- furthermore, secure the end by pressing gently.
- take the rolled ball and dust with some wheat flour.
- and start rolling to a thin circle.
- take chapathi tawa and place the rolled paratha.
- after a minuter flip off and cook the other side.
- once the golden brown spots start appearing on both sides grease with oil.
- furthermore, flip and roast both sides.
- then crush the paratha to form layers.
- finally, serve roti immediately with curry of your choice.

lachha paratha dough recipe:
- firstly, in a large mixing bowl, take maida and wheat flour.
- additionally, add salt, sugar, baking soda and a tsp of oil.
- furthermore, crumble well with your hands by rubbing between your fingers.
- now add milk and start to knead.
- add water as required and knead to smooth and soft dough. knead for atleast 15 minutes.
- furthermore, grease the dough with a tsp of more oil. cover with moist cloth and rest for 30 minutes.

- firstly, pinch a large sized ball dough, roll and flatten it.
- also dust with some wheat flour.
- furthermore, roll it into a thin circle as of chapathi. roll as thin as possible.
- grease the chapathi with oil and sprinkle wheat flour over it. this helps to get flakey layers.
- now start creating pleats by folding with the help of fingers.

- take hot chapathi tawa and place the rolled paratha.
- after a minuter flip off and cook the other side.
- once the golden brown spots start appearing on both sides grease with oil.
- furthermore, flip and roast both sides.
- then crush the paratha to form layers.
- finally, serve roti immediately with curry of your choice.
another way:
- now cut to thick strips.
- roll each strips and merging together.
notes:
- firstly, knead the dough well till its smooth and soft.
- furthermore, prepare paratha with just wheat flour for more healhy diet.
- additionally, sprinkle some chaat masala along with wheat flour for more flavours.
- finally, roast the paratha on medium flame to cooke completely.
