i have posted the traditional carrot soup recipe long back, but this recipe is an extension to it. the addition part of this recipe is the ginger flavour i have added on to of carrot puree. with respect to the additional ingredient, ginger is the only extra, but it makes a lot of difference to the taste and flavour. when ginger is mixed with carrot it ends up with a unique taste to it. moreover, the traditional carrot and ginger soup do have other ingredients like cream, sour cream and an optional cider to it. while it tastes good when these ingredients are added, but i intentionally avoided it as it may not suit the indin taste bud. but it is completely optional and can be added if you like so.

furthermore, some more tips, suggestions and variations for a perfect and creamy carrot ginger soup recipe. firstly, i would heavily recommend using fresh and juicy orange carrots for a bright coloured soup. yet you can make it with indian red coloured carrots, typically used to make gajar halwa. secondly, consistency is a key factor for the perfect soup recipe. it should not be thin or thick and it has to be in between. the consistency has to be medium. lastly, the soup has to be served hot and you may have to reheat or microwave once it is rested. also, you may have to add some water to bring it to the correct consistency.

Ingredients
  

for pressure cooking:

  • 2 tbsp olive oil
  • 2 inch ginger, finely chopped
  • ½ onion, sliced
  • 3 carrot, chopped
  • cup water
  • ½ tsp salt

other ingredients:

  • ½ tsp mixed herbs
  • ½ tsp pepper powder
  • ¼ tsp salt
  • 2 tbsp pumpkin seeds, for garnishing
  • 1 tsp mint / pudina, for garnishing

Instructions
 

  • firstly, in a pressure cooker heat 2 tbsp olive oil and saute 2 inch ginger.
  • now add ½ onion and saute until onions soften.
  • add 3 carrots and saute for 2 minutes.
  • saute until the ginger turns aromatic.
  • add 2½ cup water and ½ tsp salt.
  • cover and pressure cook for 3 whistles.
  • drain off and cool completely.
  • transfer the cooked carrot into the blender and blend to smooth puree.
  • now take the carrot puree into large kadai.
  • also, add in leftover water used for cooking carrot.
  • mix and boil adjusting consistency as required.
  • further, add ½ tsp mixed herbs, ½ tsp pepper powder and ¼ tsp salt.
  • finally, garnish carrot ginger soup with 2 tbsp pumpkin seeds and 1 tsp mint.
