Literally, the chai or tea is prepared by just adding hot water to the premix powder. Particularly, when the hot water is mixed with the powder, the transformation from a dark color to a creamy chai color is very satisfying. The recipe I have developed is very much inspired by the chai latte premix that is easily available in any store. However, I have slightly modified and skipped vanilla beans and other whole spices. Adding vanilla and more cinnamon makes it more creamy and sweet with less punch of tea powder caffeine. In short, I have tried to replicate the desi chai taste and hence it should easily cater to every taste bud.

Firstly, due to the nature of the recipe, the powder has to be grounded to smooth fine powder. Basically, the recipe instruction is to add hot water to the powder, and has to dissolve. Otherwise, the powder may settle at the bottom. Secondly, I have added powdered sugar to the chai premix with a ratio of 1 tsp to a cup of tea. This can be reduced or increased based on individual sweet preferences. Sugar can be even skipped if not is required for you. Ingredients
  

  • 1 tsp cardamom
  • ½ inch cinnamon
  • 1 tsp cloves
  • ½ tsp pepper
  • small piece nutmeg
  • 1 inch dry ginger
  • 1 tsp fennel
  • ½ cup tea powder
  • 1 cup milk powder
  • ½ cup sugar

Instructions
 

  • Firstly, in a heavy-bottomed pan take 1 tsp cardamom, ½ inch cinnamon, 1 tsp cloves, ½ tsp pepper, a small piece nutmeg, 1 inch dry ginger, and 1 tsp fennel.
  • Dry roast on low flame until the spices turn aromatic.
  • Cool completely, and transfer to the mixer jar.
  • Also, add ½ cup of tea powder and grind to a fine powder.
  • Transfer the mixture to the sieve.
  • In the same mixer jar add 1 cup milk powder and ½ cup sugar.
  • Grind to a fine powder.
  • Now transfer the mixture to the sieve and mix well.
  • Mix well making sure the chai and milk powder mixture is well combined.
  • Instant chai premix is ready, store in an airtight container and enjoy for up to 3 months.
  • To prepare chai, take 1 tbsp chai premix and add 1 cup hot water.
  • Mix well and rest for 1 minute. you can filter out chai or just leave out the bottom as the chai powder settles down.
