i am a huge fan of gravy based curries for my lunch and dinner. i generally avoid dry or mix veggie curries as it makes difficult to relish with dry roti or bread. however, these gravy based curries require additional effort to make this base. it is either made with a combination of onion and tomato base or with different types of nuts and dry fruits. but these creamy curries can also be made with readily available yoghurt or curd with an additional topping of veggies like bhindi, aloo or any choice of vegetables. the best part of these kinds of recipes is the creaminess and sour taste it has to offer via curd. moreover, when it is mixed with spices like garam masala, chilli powder and turmeric it has to offer more flavour, colour and taste in each bite.

furthermore, i would like to add some more additional tips, suggestions and variants to dahi bhindi recipe. firstly, you need to be super cautious with the okra or bhindi. if it gets in contact with moisture, it would release sticky glue which would make the whole curry sticky. therefore, make sure to wipe it with a dry cloth before chopping. secondly, the curd has to be whisked properly before it is mixed to the curry. otherwise, it may start curdling when it brought in contact with heat. lastly, you can follow the same procedure to use any other vegetables with the same procedure. you may use other vegetables like potatoes, beans, carrots, capsicum and also eggplant.

Ingredients
  

  • 4 tbsp oil
  • 15 bhindi / okra, chopped
  • 2 tbsp oil
  • 1 tsp cumin
  • 1 tsp kasuri methi
  • 1 bay leaf
  • 2 pod cardamom
  • 1 onion, finely chopped
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • ¾ tsp garam masala
  • cup curd, whisked
  • ¾ tsp salt
  • 2 tbsp coriander, finely chopped

Instructions
 

  • firstly, in a large kadai heat 2 tbsp oil and fry 15 bhindi.
  • fry on medium flame until the bhindi changes colour and not sticky.
  • keep aside the fried bhindi.
  • in the same kadai, heat 2 tbsp oil, 1 tsp cumin, 1 tsp kasuri methi, 1 bay leaf and 2 pod cardamom.
  • saute on low flame until the spices turn aromatic.
  • now add 1 onion, 1 tsp ginger garlic paste and saute until the onions turn golden brown.
  • further, add ¼ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp cumin powder, ½ tsp garam masala.
  • saute on low flame until the spices turn aromatic.
  • add 1½ cup curd and cook on low flame.
  • continue to cook until the mixture starts to separate the oil.
  • further, add the fried bhindi and ¾ tsp salt.
  • mix well-adjusting consistency as required.
  • cover and simmer for 5 minutes or until flavours are absorbed well.
  • now add ¼ tsp garam masala and 2 tbsp coriander. mix well.
  • finally, enjoy dahi bhindi with roti or rice.
