Ingredients
  

  • 2 cup (260 grams) dates / khajoor, pitted
  • 1 cup hot water, for soaking
  • ½ cup ghee / clarified butter
  • ¼ tsp cardamom powder
  • 2 tbsp cornflour
  • ½ cup water, for slurry
  • 10 cashew / kaju, chopped

Instructions
 

  • firstly, in a large bowl soak 2 cup dates in 1 cup hot water for 30 minutes.
  • blend to smooth paste.
  • transfer the dates paste to a large kadai.
  • add ¼ cup ghee and mix well.
  • keeping the flame on medium, keep stirring until the ghee is absorbed well.
  • add 2 tbsp of ghee and continue to cook.
  • cook until the mixture thickens and turns glossy. takes approx 15 minutes.
  • in a small bowl take 2 tbsp cornflour.
  • add ½ cup water and mix to form a smooth lump-free slurry.
  • pour in cornflour slurry and mix well.
  • cook on medium flame stirring continuously.
  • the mixture thickens and turns glossy after 30 minutes.
  • in a small bowl take 2 tbsp ghee and roast 10 cashews until it turns golden brown.
  • add in fried cashew, ¼ tsp cardamom powder to halwa and mix well.
  • transfer the halwa mixture to a tray lined with baking paper.
  • level it up with the help of a spatula.
  • now rest for 30 minutes or until the halwa is set completely.
  • cut into pieces with a sharp knife.
  • finally, enjoy dates halwa or store in the refrigerator and enjoy for a week.
