drumstick curry recipe | mulakkada curry | drumstick sabji | shevga bhaji with detailed photo and video recipe. a unique tasty south indian curry or sabzi recipe made with fresh drumstick in a spicy and creamy curry. it shares a similar curry base as eggplant with a combination of peanuts, sesame seeds and dry coconut. it is an ideal alternative to the drumstick based sambar recipe and can be easily shared with either rice or chapathi or any types of bread.

as i was explaining, the curry base is very similar to the ennegayi recipe or the gutti vankaya curry. basically, it is prepared with a combination of peanuts, dry coconut, sesame seeds and garam masala with a topping of onions and tomato. this yields a creamy curry base which is generally stuffed in between the choice of vegetables. but for this recipe, we do not stuff it but boil it with a curry base with more water. this helps to cook the drumsticks but also absorbs all the flavour and spice inside them. hence it makes one of the tasty mulakkada curry compared to the types of drumstick sambar recipes.

furthermore, some more additional tips, suggestions and variants to the drumstick curry recipe. firstly, the drumsticks have to be tender and fresh and avoid using frozen which are generally dry with no moisture in them. also, try to use a small-sized drumstick for this curry so that the spice flavour can easily reach the centre part of it. secondly, once the curry is prepared, try to rest it for a minimum of 30-60 mins so that the flavour is fully absorbed by the vegetable. as matter of fact, it tastes better when you serve it the next day. lastly, you may follow the same curry base and use any choice of vegetable to prepare the curry. the ideal combination of vegetables are potatoes, radish, whole tomatoes and even pumpkin.

Ingredients 

for masala paste:

  • 2 tbsp peanut
  • 2 tbsp sesame
  • 2 tbsp dry coconut
  • 2 tsp poppy seeds
  • water (for grinding)

for curry:

  • 2 tbsp oil
  • 1 tsp mustard
  • 1 tsp cumin
  • pinch hing
  • few curry leaves
  • 1 onion (finely chopped)
  • 1 tsp ginger garlic paste
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp salt
  • 2 tomato (chopped)
  • 20 pieces drumstick
  • 1 cup water
  • 2 tbsp coriander (finely chopped)


Instructions 

masala paste preparation:

  • firstly, in a pan dry roast 2 tbsp peanut on low flame until the peanuts turn crisp.
  • now add 2 tbsp sesame, 2 tbsp dry coconut, 2 tsp poppy seeds.
  • roast until the spices turn aromatic.
  • cool completely and blend to a fine powder without adding water.
  • now add ½ cup water and blend to smooth paste. keep aside.

how to make andhra style mulakkada curry:

  • firstly, in a large kadai heat 2 tbsp oil. splutter 1 tsp mustard, 1 tsp cumin, pinch hing and few curry leaves.
  • add 1 onion, 1 tsp ginger garlic paste and saute until onions change colour.
  • further keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp cumin powder, 1 tsp garam masala and 1 tsp salt.
  • saute until the spices turn aromatic.
  • further, add 2 tomato and saute until tomatoes turn soft and mushy releasing oil.
  • add in the prepared masala paste and cook well.
  • cook until the oil separates from the masala paste.
  • now add 20 pieces drumstick and mix well.
  • add 1 cup water and adjust the consistency.
  • cover and cook for 15 minutes or until the drumstick is cooked well absorbing the flavour.
  • keep mixing in between to prevent from burning and continue to cook until oil separates.
  • finally, add 2 tbsp coriander and mix well. enjoy drumstick curry with roti or rice.
