cupcakes recipe | eggless cupcakes recipe | vanilla cupcake with detailed photo and video recipe. basically a small cake, typically designed for a single person with the same traditional cake batter. it is baked in a small thin paper rolls which holds and gives shape to these amazing tiny cakes.
this recipe of cupcakes is a basic one without any frosting and i have used only choco chips for flavoring. however, the frosting can be simple whipped cream topped on top of cupcakes. in addition, it can also be topped with frosting, pastry cream and juicy fruits. or even thick chocolate syrup on top of baked cupcakes would certainly enhance the taste. perhaps i would soon post a recipe of a cupcake with frosting. furthermore, these cupcakes can also be stuffed with chocolate bars which would be very similar to chocolate lava cake.
moreover, there are can several variations with simple cupcake recipes. firstly, if you do not have paper rolls or aluminum cup, coffee mugs can also be used to prepare with the same batter. in addition, even glass jars can be used to prepare eggless cupcakes. furthermore, with the same recipe, butterfly cup cake can also be prepared. basically, carve the top of baked cake, and then fill it with whipped cream and strawberry jam. lastly, add some crushed oreo cookies to cake batter to make cookie cupcake recipe.

Ingredients
- ¾ cup curd / yogurt, fresh curd
- ¼ cup oil, unflavoured
- 1 tsp vanilla extract / vanilla essence
- 1¼ cup maida / all-purpose flour / plain flour
- ½ cup powdered sugar
- 1 tsp baking powder
- ½ tsp baking soda / sodium bicarbonate
- pinch of salt
- ¼ cup water
- ¼ cup chocolate chip
- 6 cupcake liners
Instructions
- firstly, in a large mixing bowl take ¾ cup of curd and ¼ cup of oil.
- further add vanilla extract and whisk well.
- furthermore whisk 5 minutes till the curd and oil blends smooth.
- then sieve maida, powdered sugar, baking powder, baking soda and a pinch of salt.
- whisk and combine.
- also add ¼ cup of water and make a smooth batter.
- furthermore, add chocolate chip and fold gently.
- scoop the cake batter and pour into cupcake liners two-third to ¾ full.
- and also tap twice to level up uniformly and remove any air bubbles if present.
- roughly spread few chocolate chips over the cup cake batter.
- bake the cake at 180 degree celsius or 356 degree fahrenheit for 15 minutes.
- cool down the cake completely.
- finally serve vanilla cupcake immediately or serve as required.
how to make eggless cupcakes with step by step photo recipe:
- firstly, in a large mixing bowl take ¾ cup of curd.
- also add ¼ cup of oil.
- further add vanilla extract and whisk well.
- furthermore whisk 5 minutes till the curd and oil blends smooth.
- then take sieve and add maida.
- also add powdered sugar.
- furthermore, add 1 tsp baking powder, ½ tsp baking soda and a pinch of salt.
- sieve all together making sure there are no lumps.
- whisk and combine all the dry ingredients with the curd mixture.
- also add ¼ cup of water and make a smooth batter.
- whisk smooth till there are no lumps and batter turns smooth. also make sure the batter is of smooth dropping consistency.
- furthermore, add chocolate chip and fold gently.
- scoop the cake batter and pour into cupcake liners two-third to ¾ full.
- and also tap twice to level up uniformly and remove any air bubbles if present.
- roughly spread few chocolate chips over the cup cake batter.
- bake the cake at 180 degree celsius or 356 degree fahrenheit for 15 minutes. to bake in microwave or cooker check out the notes section below.
- to check the cake has baked completely, always insert a toothpick at the centre and see if it comes out clean. else bake for 5 more minutes.
- cool down the cake completely. also transfer the cake to cooling rack to cool faster.
- finally serve vanilla cupcake immediately or serve as required.
notes:
- firstly, do not pour the batter fully as during baking the cake will rise. give room for raising.
- also to bake in microwave convection mode pre heat and bake at 180 degrees for 30 minutes. and to bake in cooker check out how to bake in cooker.
- furthermore, add cocoa powder to prepare chocolate flavoured cup cakes.
- finally, vanilla cupcakes / muffins taste great when they are served for breakfast.
Hi..I’m following your recipe for quite some time but this is my 1st feedback. Recipe is awesome. Everybody at home loved the cake.
One thing I have noticed. .1st day cake is usually good in texture but whenever I refrigerate it’s little bit sticky always.what may be the reason ? but this time it’s not sticky.
