I have posted quite a few candies or lollies or sweet snacks in my blog, but this lolly snack is completely different. This is not only sweet in taste but also carries medicinal aspects. In other words, the combination of sugar and ginger juice makes an effective and healthy sweet snack that can be used as a cold and flu remedy. I personally make these, especially during the ginger season and it is thrifty to buy them. These can be easily made in large quantities and stored in air-tight containers. These can be easily served to kids, especially those who like store-bought chocolates on every occasion. In addition, these sugar candies can also be served as replacements to cough syrups with the stick attached to them. Do let me know if you like it or if you have any other variations to it.

Firstly, the sugar and ginger ratio has to be proportional for both taste and medicinal properties. Hence, I would not recommend you alter the ratio, especially the sugar quantity as it may end as just lollies. Secondly, these candies can be shaped as you wish and there is no right or wrong. I found this shape shown in the video easy to shape, but you choose any way as per your choice. Lastly, you have to be quick while shaping it as the sugar syrup turns hard quickly and it may stick to the pan. Perhaps, you may have to reheat it or microwave it so that it starts melting again.

Ingredients
  

  • 150 grams ginger
  • 400 grams jaggery
  • ½ tsp black salt
  • ½ tsp turmeric
  • ½ tsp pepper powder
  • ½ tsp ghee

Instructions
 

  • firstly, peel the skin of ginger and roughly chop.
  • transfer the ginger to a blender and grind to smooth paste adding water if required.
  • take the ginger paste into the pan and cook for a minute.
  • add 400 grams of jaggery and stir well.
  • stir until the jaggery melts completely.
  • continue to cook until the mixture thickens and start to separate the pan. you can also check the consistency, by dropping the syrup in water and make sure it turns to soft ball consistency.
  • further add ½ tsp black salt, ½ tsp turmeric, ½ tsp pepper powder and ½ tsp ghee.
  • mix well making sure everything is well combined.
  • now immediately, drop a tsp of mixture over butter paper.
  • once cooled, coat with sugar powder to avoid from sticking.
  • finally, store the ginger candy in an airtight container and use it for up to 3 months.

  • also, you can use sugar in place of jaggery.
  • Additionally, the consistency of the syrup is very critical. if the syrup is overcooked, then it turns hard. and if the syrup is undercooked, then it turns sticky.
