recently, i have been posting a lot of recipes with roti or chapati, especially the leftover roti recipes. for instance last week i had posted leftover roti ladoo and roti sandwich. i think these posts triggered a lot of recipe requests to post a video on how to make soft roti, phulka and even chapati. hence i thought of posting all the 3 variations with single wheat flour dough. well i have tried or attempted to showcase all the tips and tricks for all 3 variations, but i trust it may not be complete. every mother, wife or a cook would have some or other tips to make it even better. i believe cooking is an art and it can be fine-tuned by sharing the knowledge with one another. i am open to listen and update my technique. feel free to pass on your comment and suggestions to me and i will try to accommodate it in my cooking art.
furthermore, i would like to highlight some more tips, suggestions, and variations to make a perfect roti & chapati. firstly kneading is the key step for getting a soft and puffy indian flatbread recipe. do not over knead it and also do not press it hard with a lot of pressure. your kneading should be soft and gentle. secondly, i have not added any extra oil while mixing the dough. i know some prefer to add oil while mixing and preparing the dough. it should be equally fine to add if you prefer to have it. lastly, to get a puffy roti and phulka, do not rest the rolled round disc. i recommend to roll it and fry the disc immediately or simultaneously. also, do not overheat the frying pan as the disc may stick to the pan.

Ingredients
- 3 cup wheat flour / atta
- 1 tsp salt
- warm water, for kneading
- oil, for roasting
Instructions
- firstly, in a large bowl take 3 cup wheat flour and 1 tsp salt. mix well.
- now add water as required and knead the dough. using water helps to prepare super soft dough.
- punch the dough and sprinkle water.
- knead the dough until it turns super soft and non-sticky. approximately 7 minutes of kneading is required.
- now place the dough in an airtight box and grease with 1 tsp oil.
- cover and rest for 20 minutes.
phulka preparation:
- knead the dough again and pinch a ball sized dough and roll uniformly.
- dust with wheat flour and roll thinly.
- roll without putting much pressure.
- place the rolled disk on hot tawa. make sure the flame is on medium.
- cook until the base is half cooked. once the base is half cooked, flip over.
- cook fully on the other side.
- now place the half-cooked side on the flame.
- increase the flame until it puffs up.
- turn over and cook both the sides on the flame.
- finally, phulka is ready.
roti preparation:
- firstly, put the rolled dough over hot tawa.
- cook on medium flame until the base is fully cooked.
- once the base is fully cooked turn over. the roti will start to puff up.
- once the roti puffs up press gently to puff uniformly.
- finally, roti is ready.
chapati preparation:
- firstly, take a ball sized dough and dust with wheat flour.
- roll to a thick disk of 5 cm diameter.
- now spread ½ tsp of oil uniformly.
- fold to a triangle and dust with wheat flour.
- roll gently without putting much pressure.
- roll as thin as possible to have thin chapati.
- now place the rolled chapati over hot tawa.
- cook on medium flame until the base is cooked.
- flip over and cook both sides.
- spread a tsp of oil and press gently to puff up.
- cook until both sides of chapati is cooked well.
- finally, chapati is ready.

notes:
- firstly, make sure to take good quality wheat flour for super soft roti.
- also, do not put more pressure while kneading the dough and also while rolling.
- using warm water to knead the dough helps to soften the dough.
