There has been a lot of influence from overseas cuisine, which eventually gels into the native recipes. One such straightforward adapted recipe is the kaju biscuit, a classic example of the fusion of 2 cuisines.
As I mentioned, thisย kaju biscuitsย orย cashew cookie recipeย is unique. To begin with, the combination of ghee and plain flour is very innovative. Generally, in most cookie recipes, butter is the wet or greasy ingredient. However, as an Indian fusion recipe, ghee has added an alternative to the Hyderabadi Karachi bakery-style cookie batter. In addition, I have added cashew powder to the topping of the cashew nuts pieces. Adding cashew nuts opens up a new dimension of flavours for these biscuits. Furthermore, the combination of cashew nut and custard powder makes it a creamy, soft, rich biscuit recipe.
Furthermore, I would like to add more tips, suggestions and variations to the Kaju biscuit recipe. Firstly, these biscuits are made with plain flour, making it an ideal combination. These can also be made with wheat flour or multigrain flour to make it a healthy alternative. Secondly, I baked these cookies in a traditional oven, which makes baking them relatively easy. But you can also make these in the cooker and check my peanut cookies for the detailed steps. Lastly, use fresh and homemade ghee for the best result. Store-bought ghee can make these cookies stale quickly with less shelf life.
