i personally like almost all the bitter gourd recipes and i prepare the bitter gourd fry and stuffed karela recipe almost every week. however once in a while i surprise my husband by preparing karela chips recipe as he is a big fan of this bitter chips. he enjoys his evening tea with some munching snacks and his joy doubles if it bitter gourd chips. to be honest, it was  his idea to come up with the video of hagalkayi or pavakkai chips recipe. since it was more than 2 months and i had not prepared it.

bitter gourd chipsfurthermore, some important tips and suggestions for perfect crispy bitter gourd chips recipe. firstly, i heavily recommend to use tender bitter gourd for the chips or even bitter gourd fry recipe. typically tender one’s are less bitter and would yield more crisp result. secondly, i used chips slicer to slice the bitter gourd evenly. slicing it evenly helps to cook them evenly while deep frying. lastly, i have used corn flour in this recipe, alternatively you can also use rice flour to make it crisp.

Ingredients
  

  • 2 bitter gourd / karela / hagalkayi / pavakkai, sliced
  • 1 tbsp corn flour
  • 1 tbsp bean / gram flour
  • ½ tsp turmeric / haldi
  • 1 tbsp rice flour / akki hittu
  • 1 tsp kashmiri red chilli powder / lal mirch powder
  • salt to taste
  • 1 tsp aamchur powder / dry mango powder
  • oil for deep frying

Instructions
 

  • firstly, slice the karela (bitter gourd) into slightly thick slices.
  • add in 1 tbsp corn flour, 1 tbsp besan, 1 tbsp rice flour, ½ tsp turmeric, 1 tsp chilli powder, 1 tsp aamchur powder and salt to taste.
  • combine all the ingredients well. do not squeeze the bitter gourd as the chips turns mushy.
  • now deep fry in hot oil. do not over crowd the karela.
  • stir occasionally, keeping the flame on medium.
  • fry till the karela chips turn golden and crisp.
  • finally, serve karela chips as a tea time snack or as a side dish with lunch.

notes:

  • firstly, use fresh karela for more crisp and crunchy karela chips.
  • also increase the amount of red chilli powder more spicy chips.
  • additionally, store in the airtight container and serve as required.
  • finally, karela chips taste great when they are crunchy and spicy.

  1. when I fried them, all the masala went to the oil. it was not sticking on to the Karela pieces
