carrot cake recipe | how to make easy eggless carrot cake recipe with detailed photo and video recipe. basically a carrot flavoured cake recipe orange coloured cake recipe which is is mainly prepared for occasions or for breakfast. the cake can be prepared either by mixing the finely grated carrot or by adding the carrot juice to cake batter. further the cake can be served either with or without frosting.
typically the cake batter is prepared with all purpose flour or plain flour which helps to raise it while baking. but in this carrot cake recipe i have added wheat flour instead of maida. i was getting several request for a healthy alternative and hence i used atta for this recipe. the whole idea to make it healthy, is to consume it for breakfast too. in other words the recipe is almost very similar to banana bread or banana cake. further, i have not added any frosting on top of carrot cake recipe. but if you are preparing for this any occasion than i would recommend to add cream cheese frosting or vanilla frosting.
furthermore some important tips and recommendations for a perfect carrot cake recipe. firstly, i have added sweetened condensed milk which contains sufficient amount of sugar and hence i have not added any extra sugar. but if you wish to control the sugar quantity than use plain evaporated milk for this recipe and add sugar accordingly. secondly, do not over mix after adding wheat flour to wet ingredients otherwise it may turn chewy. lastly, i have added olive oil in the place of unsalted melted butter. the main reason is because butter solidifies after the cake is cooled and cake may turn hard.

Ingredients
- 1 tin, 397 gm milkmaid / condensed milk
- ½ cup 119 gm buttermilk
- ¼ cup 54 gm olive oil
- 1 tsp vanilla extract
- 1 tsp vinegar
- 2 cups 263 gm wheat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp cinnamon powder
- pinch of salt
- 1 cup 180 gm carrot, grated
- 2 tbsp almonds / badam, chopped
- 2 tbsp raisins / kishmish
Instructions
- firstly, in a large mixing bowl take 1 tin (397 gm) milkmaid.
- also add ½ cup (119 gm) buttermilk, ¼ cup (54 gm) olive oil, 1 tsp vanilla extract and 1 tsp vinegar.
- whisk smooth making sure everything is combined.
- now in a sieve take 2 cups (263 gm) wheat flour, 1 tsp baking powder, ½ tsp baking soda, ¼ tsp cinnamon powder and pinch of salt. sieve everything well.
- combine well with cut and fold method adding water if required.
- further add 1 cup grated carrot, 2 tbsp almonds and 2 tbsp raisins.
- combine well and make sure not to over mix the cake batter as it turns chewy.
- further, transfer the cake batter into the cake mould.
- bake the cake at 180 degree celsius for 30-40 minutes.
- finally, serve the carrot cake or store in airtight container.

- further, transfer the cake batter into the cake mould or bread mould (width: 12 cm, height: 6 cm, length: 26 cm). make sure to grease the mould with butter to avoid sticking and line butter paper at bottom of tray.
- level up the batter and pat the tray twice to remove the air incorporated into the batter.
- place the cake tray into preheated oven. bake the cake at 180 degree celsius or 356 degree fahrenheit for 30-40 minutes.
- or bake till the toothpick inserted comes out clean.
- further, allow the cake to cool completely and later cut to slices and serve.
- finally, serve the carrot cake or store in airtight container.
notes:
- firstly, add more grated carrot to make cake more nutritious.
- also, add dry fruits like dates, cashew, walnut to make more healthy and rich.
- additionally, use butter in-place of olive oil if you are serving for kids.
- finally, carrot cake stays good for a week when refrigerated.

This cake looks like a dream, I would like to try it this weekend, is it possible to replace condensed milk with non-dairy milk like soy, almond, etc milk with sugar? (My bf is vegan) if yes what would be the correct proportions? Thank you madam, would report back about progress
yes you can replace condensed milk with any non diary milk.. add accordingly to make a thick flowing consistency batter.. also make sure to add sugar depending on the sweetness you are looking for.
