palak patra recipe | palak rolls | spinach patra roll | palak alu vadi with detailed photo and video recipe. a traditional and innovative roll or patra recipe made with spinach leaves and spiced besan batter. it is an excellent appetiser or a snack which can be served for any part of the entire day’s meal, including breakfast and supper. the roll or patra is stuffed with the required amount of spice and savoury and hence do not require any additional toppings of chutney or sauce.
i have always been a huge fan of patra recipes irrespective of the underneath leafy vegetables used in them. as matter of fact, i like the south indian variant or my hometown udupi special patrode compared to all the variants. basically the south indian is made with coconut masala as compared to the western india offerings. i personally feel the coconut masala adds more flavour and aroma to the leaves as compared to the besan flour. nevertheless, the technique and the style is very similar and hence carries the same taste compared to both the offerings. the added advantage of the besan flour is it can be used with any type of leafy vegetables and can be easily spread on top of any delicate leaves. therefore, i attempted the palak alu vadi with gram flour and used coconut as just toppings.
furthermore, i would also like to add some additional tips, suggestions and variants to the palak patra recipe. firstly, as the palak or spinach leaves are the critical ingredient for this recipe and hence it has to be fresh and tender. moreover, the leaves have to be large and even in shape so that they can be easily shaped. secondly, as shown in this recipe, you may use any other edible leafy vegetables and follow the same process. lastly, as an alternative to the besan mixture, you may also coconut mixture for the south indian variant. if you are using coconut, try to make it a smooth paste and it can be easily spread.

Ingredients
- 1 cup besan / gram flour
- ¼ cup rice flour
- ¼ tsp turmeric
- ½ tsp chilli powder
- 2 tsp sesame
- ¼ tsp ajwain / carom seeds
- 1 tsp cumin
- 1 tsp ginger garlic paste
- 1 chilli, finely chopped
- ½ tsp salt
- 2 tsp oil
- water, for batter
- 1 bunch palak / spinach
- oil, for frying
Instructions
- firstly, in a large bowl take 1 cup besan and ¼ cup rice flour.
- add ¼ tsp turmeric, ½ tsp chilli powder, 2 tsp sesame, ¼ tsp ajwain and 1 tsp cumin.
- also add 1 tsp ginger garlic paste, 1 chilli, finely chopped, ½ tsp salt and 2 tsp oil.
- mix well making sure all the spices are well combined.
- now add ½ cup water and prepare the batter.
- adding water as required make a smooth thick paste. keep aside.
- take big sized palak leaves and spread besan batter.
- repeat the leaves and besan batter forming atleast 3 layers.
- now roll tight making sure all the layers are intact.
- further, spread a little besan batter over the roll.
- place in steamer and steam for 15 minutes on medium flame.
- cool down the rolls. you can serve the palak vadi without frying. however, tastes great when fried.
- now heat 2 tbsp oil on the pan and place the steamed palak rolls.
- roast on medium flame turning all the sides.
- flip over and fry until the rolls turn golden and crisp.
- now sprinkle 1 tsp sesame seeds and is ready to serve.
- finally, enjoy palak vadi or crispy palak rolls topped with coconut.

notes:
- firstly, make sure to use big sized palak leaves to get nice layers.
- also, you can directly pan-fry without steaming. make sure to fry on a really low flame as the besan may remain raw inside.
- additionally, you can use the same batter to prepare cabbage vadi.
- finally, palak patra recipe tastes great when prepared crispy.
looks yummy but we don’t get this big spinach leaves in US. also you just pan fry without tadka. we ususally vagharofy the patra with rai, til coconut kothmir and all.
