Indian cuisine is incomplete without mentioning or highlighting its range of dessert recipes. The majority of these desserts are milk-based dessert recipes with kheer being an easy and simple dessert. One such hugely popular North Indian kheer is the makhana kheer recipe, known for its creamy and rich texture.

I have posted quite a few kheer recipes and almost all are easy and simple to prepare. Yet when I compare the makhana kheer with other kheer recipes, I have to admit that it is the simplest of all. All the other may include roasting, boiling, or cooking the hero ingredients with milk or ghee. However, lotus seeds or fox nut seeds do not have any such complications. It can be added directly to the boiled milk, and due to the nature of the seeds, it just blends with it. In short, the creamy and rich kheer takes a maximum of 10-15 minutes. In addition, once the kheer is prepared and topped with mixed dry fruits, it can topple any premium dessert. Do try this and I am certain it would be appreciated by all age groups.

Furthermore, some more related and additional tips, suggestions, and variations to the makhana kheer recipe. Firstly, as an additional step, you can roast the seeds before adding them to the kheer. This helps to hold the shape of the seeds for a longer duration and also adds a crunchy texture to the kheer. Secondly, with makhana, you may add vermicelli and/or sabudana pearls to make it a combo kheer. However, adding a hero ingredient, may not get the ideal lotus seed dessert taste. Lastly, as an alternative to sugar, you may add jaggery to make it a healthy variant. Adding jaggery may end up with darker-colored kheer.

Ingredients
  

!for nuts powder:

  • ½ cup makhana
  • 2 tbsp cashew
  • 2 tbsp almonds

!for kheer:

  • 4 cup milk
  • few saffron
  • ¼ cup sugar
  • ½ tsp cardamom powder

!for roasting:

  • 1 tsp ghee
  • 2 tbsp cashew, chopped
  • 2 tbsp almonds, chopped
  • 2 tbsp raisins
  • 1 cup makhana

Instructions
 

  • Firstly, in a mixer jar take ½ cup makhana, 2 tbsp cashew and 2 tbsp almonds.
  • Pulse and grind to a fine powder. Keep aside.
  • In a kadai heat 4 cup milk, few saffron and mix well.
  • Add powdered nuts and mix well.
  • Keep stirring, and cook until the milk thickens slightly.
  • Now add ¼ cup sugar and mix well.
  • Boil until the milk thickens and turns creamy.
  • In a pan heat 1 tsp ghee, 2 tbsp cashew, 2 tbsp almonds, 2 tbsp raisins and 1 cup makhana.
  • Roast until the nuts turn crunchy.
  • Transfer the roasted nuts into the kheer, also add ½ tsp cardamom powder.
  • Mix well making sure everything is well combined.
  • Finally, enjoy Makhana Kheer Recipe warm or cold.
