sheera or also known as kesari bath recipe is one of the most sweets in my hometown. it is prepared for morning breakfast, as prasadam for any rituals or occasions and even as a dessert for guests and small celebrations. however, i generally avoid having plain rava kesari bath and i always prefer to have an additional seasonal or non-seasonal tropical fruit. my personal favourite combination is a sliced banana with rava kesari. but i do love the taste of pineapples too in it. the best part of adding pineapple is the flavour it adds. in each bite, you would get the taste of sweet and sour taste of pineapples and thus avoiding the monotonous sweet taste.
furthermore, i would like to add some more variations, suggestions and tips to pineapple sheera recipe. firstly, i would heavily recommend using the coarse or medium-sized rava for this recipe. avoid using fine or even the bansi rava as you may not get the same texture and consistency. secondly, i would heavily recommend using fresh and juicy pineapples cubes for this recipe. you may also use store-bought canned diced cubes for this, but avoid if you have access to fresh ones. lastly, as an alternative, you may follow the same steps and procedure with other tropical fruits. for instance, you may use banana, mango, apple and even pear to get different taste and flavour.

Ingredients
for roasting:
- 1 tbsp ghee / clarified butter
- 10 cashew, halves
- 2 tbsp raisins
for sheera:
- 1 tsp ghee / clarified butter
- 1 cup rava / semolina / suji, coarse
- 1 cup pineapple, chopped
- 1 cup sugar
- 3 water
- 3 drops yellow food colour
- ½ cup ghee / clarified butter
- ¼ tsp cardamom powder
Instructions
- firstly, in a pan heat 1 tbsp ghee and add 10 cashew, 2 tbsp raisins.
- roast on low flame until they turn golden brown. keep aside.
- in the same ghee, add 1 cup rava and roast well.
- roast for at least 5 minutes or until it turns aromatic. keep aside.
- in a large kadai heat 1 tsp ghee and add 1 cup pineapple, chopped.
- saute for 3 minutes or until it turns aromatic.
- now add ¼ cup sugar, 3 cup water and mix well. add more sugar if the pineapple is sour.
- cover and boil for 3 minutes or until the pineapple softens.
- add in roasted rava and stir continuously.
- stir until the rava absorbs all the water without forming any lumps.
- add ¾ cup sugar, 3 drops yellow food colour and mix until the sugar melts.
- further add ½ cup ghee and mix until the ghee is well absorbed.
- cover and simmer for 5 minutes or until everything is well cooked.
- now add roasted cashew, raisins and ¼ tsp cardamom powder. mix well.
- finally, enjoy pineapple sheera or pineapple kesari bath garnished with nuts.

notes:
- firstly, make sure to roast the rava really well. else there are chances to have lumps in sheera.
- also, in place of water you can use milk for rich flavour. however, recommend using water as there are chances for milk to curdle due to sourness of pineapple.
- additionally, if you do not prefer pineapple chunks, then you can puree and add.
- finally, you can also add saffron to get kesari flavour in pineapple sheera or pineapple kesari bath recipe.
