the dosa batter for podi dosa recipe is very simple and can be done with most of the dosa batter variety. in this recipe, i have showcased a dosa batter which yields a soft dosa and i personally feel perfect for podi dosa. but there are other variations of dosa batter which yields a crisp dosa and can be used to make this recipe. in other words you can use this combination with masala dosa or even rava dosa. but you may find it that podi may not stick to the dosa batter and may spill while serving. and hence it is always recommended to have soft dosa and top it with spicy podi.
furthermore, some easy and important tips and suggestions for a perfect podi dosa recipe. firstly, i have showcased podi recipe in this post but you can use any homemade spicy pudi for this recipe. as a matter of fact you can use store bought podi to make the same recipe. secondly, top the dosa with podi as per your taste and preference. do not overcrowd dosa as it may turn spicy and also may overpower the dosa flavour. lastly, do not flip the dosa once the podi is topped. it may get burnt and also may spill over dosa tawa. also serve the dosa immediately once it is prepared and topped.

Ingredients
- 2 tbsp sesame / til
- 1 tsp oil
- ¼ cup urad dal
- ¼ cup chana dal
- 6 dried red chilli
- few curry leaves
- 2 tbsp dry coconut / kopra, sliced
- small ball sized tamarind
- ¼ tsp turmeric
- pinch hing / asafoetida
- 1 tsp salt
Instructions
- firstly, in a large tawa dry roast 2 tbsp sesame on low flame.
- transfer to the blender and keep aside.
- in the same tawa heat 1 tsp oil and add ¼ cup urad dal, ¼ cup chana dal.
- further, add 6 dried red chilli and few curry leaves. roast on low flame.
- now add 2 tbsp dry coconut and roast until the coconut turns golden.
- cool the mixture completely, and transfer to the mixi.
- also, add in small ball sized tamarind, ¼ tsp turmeric, pinch hing and 1 tsp salt.
- blend to coarse powder without adding any water.
- dosa podi is ready to store in an airtight container or use to prepare dosa.
- to prepare the dosa, pour a ladleful of dosa batter.
- cover and cook for 1 minute or until the dosa is partially cooked.
- once the dosa is partially cooked, sprinkle prepared podi.
- spread 1-2 tsp of ghee uniformly on the dosa.
- cover and simmer for 30 seconds or until the dosa are cooked completely.
- finally, enjoy podi dosa with chutney and sambar.
how to make dosa podi with step by step photo:

- also, add in small ball sized tamarind, ¼ tsp turmeric, pinch hing and 1 tsp salt.

notes:
- firstly, adding tamarind is optional. however, it increases the flavour.
- also, dry roast on low flame to prevent from burning.
- additionally, add a clove of garlic for variation.
- finally, podi dosa recipe tastes great when dosa is prepared with ghee.
