i am a huge fan of instant recipes and i particularly look and research more on instant breakfast recipes. it is not just for the fact it saves my morning breakfast time. but also for the fact that i get a lot of request for instant breakfast recipes from my readers. particularly from the working women, who try to balance their work and family life with something less time-consuming. as a matter of fact, i had already shared an instant uttapa recipe with rice flour and also instant bread uttapam with a batter made from bread. but i thought of sharing the uttapam made with poha or flattened rice, as you can also make dosa with it. as compared to the traditional ones, the uttapa are more soft and spongy in nature and hence it would be liked by everyone.
furthermore, before wrapping it up, some tips, suggestions and variations for poha uttapam recipe. firstly, in this recipe post, i have showed to make mini uttapa with 3 mini uttappa in a dosa pan. if you attempt to make one big uttapa, it may crumble to pieces when removing it from tawa. secondly, in terms of adding the topping, it is completely open-ended and you can add as per your preferences. having said that, i would highly recommend to finely chop them before using. lastly, the uttapa can be served as it is without any sides because it has all the required toppings. yet it tastes amazing when served with tomato sauce, green chutney or even coconut chutney.

Ingredients
for batter:
- ½ cup poha / aval / beaten rice, thick
- ½ cup rava / semolina / suji, fine
- ½ cup water
- ½ cup curd / yogurt
- ½ tsp salt
for toppings:
- ½ onion, finely chopped
- 5 beans, finely chopped
- ½ carrot, finely chopped
- ½ capsicum, finely chopped
- 2 tbsp coriander, finely chopped
- ¼ tsp salt
other ingredients:
- chilli flakes, for sprinkling
- oil, for roasting
Instructions
- firstly, in a large bowl soak ½ cup poha in enough water for 5 minutes.
- drain off the water and blend to smooth paste.
- transfer the poha paste to a large bowl.
- add ½ cup rava, ½ cup water, ½ cup curd and ½ tsp salt.
- mix well making sure everything is well combined.
- rest for 20 minutes making sure the rava is soaked well.
- prepare the toppings by taking ½ onion, 5 beans, ½ carrot, ½ capsicum, 2 tbsp coriander and ¼ tsp salt.
- mix well making sure everything is well combined.
- now pour the poha batter into small uttapam.
- top with a tbsp of prepared toppings and press gently.
- sprinkle chilli flakes and pour 1 tsp oil around the uttapam.
- cover and cook for a minute or until the base is cooked well.
- flip over and cook both sides.
- finally, enjoy poha uttapam with tomato sauce or coconut chutney.
