well, there is a lot of confusion about the potato-based snack recipes out there. many would have tried chips or fries but may have been disappointed as they did not turn as crisp as you get them in fast food chains. trust me you would not be disappointed with this recipe. generally, for chips and fries, there is a particular potato that has less starch in it and thus produces a crisp snack. but there isn’t any restriction for this recipe and you can use any type of potatoes for it. basically, we are using the combination of rava and cornflour which should help to get crisp rings. in addition, if you get less starchy potatoes, you may get even crispier and crunchy rings. i personally like it with a spicy dip, and hence i have shared my personal favourite simple chilli garlic chatni with this recipe.

Ingredients
  

for potato garlic rings:

  • 1 tbsp butter
  • 4 clove garlic, finely chopped
  • ½ tsp chilli flakes
  • ½ tsp mixed herbs
  • 1 cup water
  • ½ tsp salt
  • ¾ cup rava / semolina / suji, fine
  • 2 potato, boiled & mashed
  • ½ tsp salt
  • ¼ cup corn flour
  • oil, for frying

for spicy tomato garlic chutney:

  • 7 dried red chilli
  • hot water, for soaking
  • 2 tomato, cubed
  • 2 tbsp oil
  • 4 clove garlic, finely chopped
  • ½ tsp salt
  • ½ tsp sugar

Instructions
 

how to make crispy potato garlic rings:

  • firstly, in a pan heat 1 tbsp butter. add 4 clove garlic, ½ tsp chilli flakes and ½ tsp mixed herbs. saute until the spices turn aromatic.
  • add 1 cup water and ½ tsp salt. get to a rolling boil.
  • keep stirring and add ¾ cup rava.
  • continue to stir until the rava absorbs all the water.
  • sprinkle 2 tbsp water, cover and rest for 10 minutes.
  • after 10 minutes, the rava has absorbed the moisture. transfer to the large bowl.
  • also add 2 potato, ½ tsp salt and mix well.
  • since the dough is sticky, add ¼ cup corn flour and mix well.
  • mix well forming a non-sticky dough.
  • grease the dough with oil and roll slightly thick.
  • cut into ring shapes using a round cutter.
  • deep fry in hot oil, keeping the flame on medium.
  • stir occasionally, until the potato rings turn golden brown and crisp.
  • finally, drain off the potato garlic rings and enjoy with spicy tomato garlic chutney.

how to make spicy tomato garlic chutney:

  • firstly, in a bowl soak 7 dried red chilli in hot water until it softens.
  • transfer the soaked chilli into mixer jar.
  • add 2 tomato and grind to a smooth paste. keep aside.
  • in a pan heat 2 tbsp oil and add 4 clove garlic. saute slightly.
  • pour in prepared tomato chilli paste and cook well.
  • also, add ½ tsp salt and ½ tsp sugar and mix well.
  • finally, enjoy spicy tomato garlic chutney with snacks.
