i have posted quite a few tikki recipes in my blog, but this recipe of aloo channa dal tikki is very special. you may have eaten aloo or paneer tikki and may have got bored of those. this lentil stuffed tikki would certainly make it more interesting. i have used channa dal but it does taste awesome with any type of lentil. even i was not aware of such stuffed tikkis and i only came across recently while i browsing the frozen section in indian grocery store. these stuffed tikki’s are popular offerings from haldiram and mtr frozen offerings and this recipe is very much inspired by it. even though i am not a huge fan of frozen food, but i do get a lot of inspiration from those.

furthermore, some more additional tips, suggestions and variants to the dal tikki recipe. firstly, the potato selection is very crucial for this recipe or as matter of fact for any roasted potato recipe. i generally use potatoes used to make chips or wedges and they produce one of the crisp and crunchy tikki. secondly, the stuffing can be easily varied and you can choose from paneer, to mix vegetables and even met if you like to. ensure the stuffing is well mashed and also contains less moisture so that it can be easily shaped. lastly, i have pan-fried this tikki in a low to medium flame. this ensures it is crisp on the outside and gets evenly cooked on the inside.

Ingredients
  

for stuffing:

  • ½ cup chana dal, soaked 1 hour
  • 1 cup water
  • ¼ tsp turmeric
  • 1 tsp oil
  • 2 tsp oil
  • ½ tsp cumin
  • 1 tsp ginger, grated
  • 2 chilli, finely chopped
  • 2 tbsp cashew, chopped
  • 2 tbsp peas
  • ¼ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • 1 tsp aamchur
  • ¼ tsp chaat masala
  • 1 tsp salt
  • ¾ cup paneer, cubed
  • 2 tbsp coriander, finely chopped

for aloo mixture:

  • 4 potato, boiled & grated
  • ¼ tsp corn flour
  • 2 tbsp besan
  • ½ tsp pepper powder
  • ½ tsp salt
  • 2 tsp oil
  • oil, for frying

Instructions
 

how to make chana dal stuffing:

  • firstly, in a pressure cooker take ½ cup chana dal. make sure to soak the dal for 1 hour.
  • add 1 cup water, ¼ tsp turmeric and 1 tsp oil.
  • pressure cook for 3 whistles or until the dal is cooked well yet retain their shape.
  • drain off the dal to remove excess water.
  • in a pan heat 2 tsp oil, add ½ tsp cumin, 1 tsp ginger, 2 chilli, 2 tbsp cashew and saute until the spices turn aromatic.
  • also, add 2 tbsp peas, ¼ tsp turmeric, 1 tsp chilli powder, ½ tsp coriander powder, ½ tsp cumin powder, 1 tsp aamchur, ¼ tsp chaat masala and 1 tsp salt.
  • saute on low flame until the spices turn aromatic.
  • now add ¾ cup paneer and boiled dal.
  • mix well until everything is well combined.
  • further, add 2 tbsp coriander and mix well.
  • finally, transfer to the plate and cool completely. dal stuffing is ready.

how to make aloo mixture:

  • firstly, in a bowl take 4 boiled potatoes. make sure to boil the potato and cool it completely before using it.
  • add ¼ tsp cornflour, 2 tbsp besan. adding cornflour helps to remove moisture.
  • also add ½ tsp pepper powder, ½ tsp salt and mix well.
  • squeeze and mix until the dough is formed.
  • if the mixture is sticky, add 2 tsp oil and mix gently.
  • aloo mixture is ready to make tikki.

how to make stuffed tikki:

  • firstly, pinch a ball sized aloo mixture and flatten slightly.
  • place a small ball sized dal stuffing.
  • bring together making sure the stuffing is well stuffed.
  • flatten slightly, giving the tikki shape.
  • now fry the tikki on medium flame. you can pan fry or deep fry as per your preference.
  • fry on both sides until it turns golden brown and crispy.
  • drain off to remove excess oil.
  • finally, enjoy stuffed dal tikki with green chutney.
