punugulu recipe | how to make andhra punugulu with idli dosa batter with detailed photo and video recipe. a simple and easy snack recipe prepared with the leftover idli batter or dosa batter as side dish to afternoon lunch or as evening snack recipe. typically andhra punugulu is prepared with leftover idli batter but can also be prepared with dosa batter by adding semolina or rava.
in this recipe i have used leftover dosa batter, however in some recipes for punugulu involve preparing custom made dosa batter for it. also some of the recipe may involve just urad dal batter without the rice and urad dal combination, very similar to medu vada recipe. however i personally prefer to prepare it with left over idli batter instead preparing a specific batter for it. this not only saves the time to prepare it but also gives me different taste with the combination of rice and urad dal batter. otherwise if it is just a urad dal batter, it would be a same recipe as medu vada or mysore bonda recipe. also i personally reckon idli batter is much better compared to dosa as it is more thick and rough in consistency.
the end result is very similar to the south indian medu vada which is mainly prepared with urad dal batter. while preparing punugulu recipe with leftover dosa batter is extremely simple, yet i would like to add some tips and recommendations. firstly, use fermented dosa or idli batter to make soft and crispy vada. also, adding onions and green chilli is optional, you can skip it completely. finally, fry on medium flame to cook from inside and crisp from out, also make sure to add more rice flour to adjust the consistency of batter.

Ingredients
- 2 cup dosa batter / idli batter, leftover
- 1 tbsp rava / semolina / suji
- 1 tbsp rice flour
- 2 tbsp onion, finely chopped
- 1 inch ginger, finely chopped
- 1 green chilli, finely chopped
- 2 tbsp coriander, finely chopped
- 1 tsp cumin / jeera
- ½ tsp salt
- oil for deep frying
Instructions
- firstly, in a large mixing bowl take 2 cups of leftover dosa batter / idli batter.
- add in 1 tbsp rava and 1 tbsp rice flour.
- also add 2 tbsp onion, 1 inch ginger, 1 green chilli, 2 tbsp coriander, 1 tsp cumin and ½ tsp salt.
- mix well making sure everything is combined well.
- add more rice flour if required to get thick batter.
- now dip your hand in water, and start make lemon sized vadas.
- drop them one by one to hot oil.
- keep the flame in lower to medium stir occasionally.
- also fry the punugulu till they turn golden brown.
- drain off the punugulu on to kitchen towel to absorb oil.
- finally, serve punugulu with coconut chutney or tomato sauce.
how to make punugulu recipe with step by step photo:

- additioanlly, adding onion are optional, if you do not prefer.
- finally, punugulu taste great when served hot and crispy.
