this recipe of paneer schezwan is very similar to my previous dry version of chilli paneer. as matter of fact, i would say this recipe is an extension to it with a generous amount of schezwan sauce added to it. i personally like this variation where the recipe has some extra flavour of schezwan sauce. moreover, it makes an ideal side dish to other indo chinese recipes. if you ask me, my personal favourite is the combination of veg fried rice and schezwan paneer. in addition, you can extend this recipe by adding more cornflour slurry to make it gravy based. it would be certainly an ideal side dish for any indo chinese recipes.

the recipe for schezwan paneer is extremely simple, yet i would add some tips and suggestions to it. firstly, i have used the homemade paneer for this recipe which is soft, moist and fresh. you can use store bought too, but ensure it is soft and moist. secondly, the recipe has to be tossed in a high flame. basically, the added vegetables get cooked, yet retains its crunch and texture. lastly, i have used a homemade schezwan sauce with medium spice level. if you are using store-bought sauce, add it according to its spice level and also as per your preference.

  • 3 tsp oil
  • 2 clove garlic, finely chopped
  • 1 inch ginger, finely chopped
  • 1 chill, slit
  • 4 tbsp spring onion, finely chopped
  • ¼ onion, finely chopped
  • ¼ capsicum, cube
  • 2 tbsp schezwan sauce
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • ¼ tsp sugar
  • ¼ tsp salt

Instructions
 

  • firstly, in a large kadai heat 3 tsp oil and saute 2 clove garlic, 1 inch ginger and 1 green chilli on high flame.
  • also, saute ¼ onion and 2 tbsp spring onion on high flame.
  • further, add ¼ capsicum and continue to saute till they slightly change colour.
  • additionally add 2 tbsp schezwan sauce, 1 tbsp vinegar, 1 tbsp soy sauce, ¼ tsp sugar and ¼ tsp salt.
  • mix well and saute for a minute.
  • add cornflour slurry. to prepare corn flour water mix 2 tsp of corn flour with ¼ cup of water.
  • give a good mix until the gravy slightly thickens and turns glossy.
  • additionally, add fried paneer.
  • mix gently making sure the sauce has coated well uniformly.
  • finally, transfer schezwan paneer to a serving bowl and garnish with chopped spring onions green. serve with fried rice.

  1. firstly, prepare batter by taking ¾ cup maida and ¼ cup corn flour.

  2. also add ¼ tsp pepper, ½ tsp schezwan sauce and ¼ tsp salt.

  3. prepare a lump free smooth batter adding ½ cup water.

  4. add in 11 pieces of paneer and dip completely.

  5. further, deep fry in hot oil. you can also shallow fry or bake for a more healthy option.

  6. stir in between and fry till they turn golden brown.

  7. finally, drain off the fried paneer over a kitchen towel to remove excess oil. keep aside.

  • firstly, cut the pieces of paneer to your preferred size and shape.
  • also, reduce the amount of schezwan sauce and add tomato sauce if you do not want too spicy.
  • additionally, adjust the consistency of gravy by increasing the cornflour slurry.
  • finally, schezwan paneer recipe tastes great when served hot and crispy.
