Later it is mixed or tossed with the preferred hero ingredient to make the perfect curry. Yet you can make a simple 10 mins curry with these 2 ingredients and Tomato Onion Curry is one such recipe.

To be honest, there are myriad silo recipes of tomato and onion but I wanted to begin with this simple Tomato Onion Curry. This is a popular south Indian cuisine curry or particularly in Andhra cuisine. The uniqueness of this recipe is the usage of tomato and onion as their primary or hero ingredients. I personally like the combination of spicy, sweet, and sour tastes in this recipe. Moreover, it only takes 10 minutes to prepare this restaurant-style curry and serve it with your desired roti or paratha. Especially this curry would be handy when you are running low on vegetables, yet need some hotel-style curries. Ingredients
  

for frying onion and tomato:

  • 2 tsp oil
  • 3 onion, cubed
  • 2 tomato, chopped

for curry:

  • 2 tbsp oil
  • 1 tsp cumin
  • 1 tsp kasuri methi
  • 1 bay leaf
  • 4 cloves
  • 3 cardamom
  • 1 inch cinnamon
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • cup tomato puree
  • 2 tbsp cream
  • 1 tsp salt
  • 1 cup water
  • 2 tbsp coriander, chopped

Instructions
 

  • firstly, in a large kadai heat 2 tbsp oil. add 1 tsp cumin, 1 tsp kasuri methi, 1 bay leaf, 4 cloves, 3 cardamom and 1 inch cinnamon.
  • saute on low flame until the spices turn aromatic.
  • keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder and ½ tsp garam masala.
  • saute on low flame until the spices turn aromatic.
  • now add 1½ cup tomato puree and mix well.
  • cover and cook until the gravy starts to release oil.
  • further, add 2 tbsp cream and mix well.
  • now add 1 tsp salt and 1 cup water. mix well adjusting the consistency as required.
  • meanwhile, in a pan heat 2 tsp oil and add 3 onions.
  • saute until the onions shrink slightly.
  • further, add 2 tomato and cook for 1 to 2 minutes or until the tomato softens a little.
  • transfer the fried onion and tomato to the gravy and mix well.
  • cover and simmer for 2 minutes or until the flavours are absorbed well.
  • now add 2 tbsp coriander and mix well.
  • finally, enjoy onion tomato curry with roti.
