as i was explaining earlier this recipe is made without any coconut and grounding using mixer grinder. also, this is recipe is made without any pan and roasted directly on the flame which makes it unique and flavoured. the chutney is spicy, flavourful and more importantly is loaded with a burnt or charcoaly smell which makes this chutney unique. the burnt flavour of tomatoes, garlic and green chilli is different from one another and when combined together it introduces a new and unique by itself. i personally like this recipe with hot and steamed rice for my lunch and dinner. but it also tastes great when served with roti and chapati. you may also use it as a salad or dip with your favourite snack.

in addition, some more additional tips, suggestions and variations to the rotated tomato garlic chutney recipe. firstly, i would heavily recommend using ripe and juicy tomatoes so that it would be easy to cook, roast, mash and also releases tangy juice to the chutney. perhaps the roma tomatoes are the best suited for this chutney. secondly, if you feel green chillies are too spicy for this recipe, you can use bell peppers or green capsicum for the same taste and flavour. lastly, you add other veggies on top of veggies mentioned in this recipe. you may add eggplant, onions, cabbage and broccoli for different flavour and taste. my personal favourite variation is it to add onion or brinjal for a different taste.

Ingredients
  

  • 3 tomato
  • 3 chilli
  • 1 pod garlic
  • ¾ tsp cumin powder
  • ½ tsp salt
  • 2 tbsp coriander, finely chopped

  • firstly, place a wire mesh on flame and place 3 tomato.
  • roast on medium flame turning all the sides.
  • cook until the tomatoes skin is burnt and softened from inside.
  • keep aside until it gets cooled completely.
  • now roast 3 chilli and 1 pod garlic.
  • roast on medium flame turning all the sides.
  • cook until the skin is burnt and softened from inside.
  • keep aside to cool completely. once all are cooled, peel the skin.
  • transfer the roasted tomato, garlic and green chilli into large bowl.
  • mash well, you can alternatively squeeze using your hands or use a chopper for a coarse texture.
  • now add ¾ tsp cumin powder and ½ tsp salt add 2 tbsp coriander.
  • mix well-combining everything well.
  • finally, enjoy roasted tomato garlic chutney with rice or roti.
