lately, i have started getting a lot of requests to post the red chutney recipe which i have been using as a prop in my other videos. basically, whenever i make a video on snack or breakfast i use this red coloured chatni as my side prop to dip the main dish. the main reason i use it is due to the fact that its bright red in colour with a smooth texture consistency. it easily gels with video frame and makes this dish appealing. i generally make it in bulk and store it in a large container and refrigerate it. be it for the recipe videos, or for may day to day breakfast, lunch or dinner, i use it frequently. particularly, the combination of dahi chutney with chapati is just heaven. you may also use it with dal rice combination too as a spicy side dish.

furthermore, i would also add some more tips, suggestions and variations to dahi ki chatni recipe. firstly, i have added 10 kashmiri red chillies for this chatni recipe. it may sound a lot, but it is essential for this recipe. having said that, if you like to lower, you can reduce the number. secondly, while adding the yoghurt you need to whisk it properly to make a smooth textured paste. otherwise, it may curdle and you may not get the desired smooth consistency. lastly, while handling the chutney you need to use dry spoons and avoid any moisture contact. also, preserve it in a dry place for longer shelf life.

Ingredients
  

  • 10 dried red chilli
  • hot water, for soaking
  • 1 tbsp oil
  • ½ cup garlic
  • 2 inch ginger, chopped
  • 2 tbsp coriander seeds
  • 1 tsp cumin / jeera
  • ½ tsp pepper

!for tempering:

  • 3 tbsp oil
  • 1 tsp mustard
  • 1 tsp cumin
  • pinch hing / asafoetida
  • few curry leaves
  • 3 clove garlic, crushed
  • 1 cup curd, whisked
  • 1 tsp salt

Instructions
 

  • firstly, soak 10 dried red chilli in hot water for 30 minutes. keep aside.
  • in a pan, heat 1 tbsp oil and ½ cup garlic.
  • saute on medium flame until the garlic turns golden brown.
  • now add 2 inch ginger and saute well.
  • also add in soaked dried red chilli and cook for a minute.
  • further add 2 tbsp coriander seeds, 1 tsp cumin and ½ tsp pepper.
  • saute until the spices turn aromatic.
  • cool completely and transfer to the blender.
  • blend to smooth paste adding water as required. keep aside.
  • in a large kadai heat 3 tbsp oil and splutter 1 tsp mustard, 1 tsp cumin, pinch thing, few curry leaves.
  • add 3 clove garlic and saute until the garlic changes colour.
  • further add in garlic chilli paste and cook well.
  • now add 1 cup curd and stir continuously.
  • keep stir until the curd is well combined with the chilli garlic paste.
  • once the curd is well combined add 1 tsp salt and mix well.
  • cover and cook for 10 minutes or until oil separates.
  • finally, dahi garlic chutney is ready to enjoy with roti or rice.

notes:

  • firstly, make sure to whisk the curd really well before adding, else there are chances for the curd to curdle.
  • also, adjust the amount of red chilli based on the spice level you are looking for.
  • additionally, a generous amount of oil acts as a preservative. so do not compromise in oil usage.
