well, we know the different types of biriyani recipes with the dum or pressure cooked way. but there aren’t many recipes which are wrapped in a leaf and also dum cooked. this recipe is one of them with biriyani rice is wrapped in a banana leaf and then steamed in a steamer. it not only holds the spice flavour but also makes the biriyani rice moist and flavoured. i do get a lot of questions from my readers about the biriyani rice and it turning hard or dry after it is dum cooked. while it can be tricky to cook the rice but this way of cooking the rice would certainly make it moist and juicy. you may use any other type of large leaf for the same purpose, but i personally feel banana leaf is ideal. if you are a biriyani lover or anyone in your family, you should certainly try this once and see the difference.

Ingredients
  

for marination:

  • 1 cup curd
  • 1 tsp ginger garlic paste
  • 2 chilli, slit
  • 2 tsp lemon juice
  • 1 pack shan biryani masala
  • ½ tsp salt
  • 1 potato, cubed
  • 1 carrot, chopped
  • ½ capsicum, cubed
  • 5 beans, chopped
  • 3 tbsp coriander, chopped
  • 3 tbsp mint, chopped

for biryani gravy:

  • 2 tbsp ghee
  • 2 tbsp oil
  • 1 onion, finely chopped
  • 1 tsp ginger garlic paste
  • 2 tbsp fried onion / barista

for biryani rice:

  • 2 cup basmati rice
  • water, for soaking and boiling
  • 2 bay leaf
  • 2 inch cinnamon
  • 1 pod pod black cardamom
  • 2 pods cardamom
  • 1 javitri
  • 6 cloves
  • 1 star anise
  • 2 tsp ghee
  • 1 tsp lemon juice
  • 1 tsp cumin
  • ½ tsp pepper
  • 2 tsp salt

for layering:

  • banana leaf
  • 2 tbsp saffron milk
  • 1 tbsp mint, chopped
  • 1 tbsp coriander, chopped
  • 1 tsp ghee
  • biryani masala

Instructions
 

how to marinate vegetables:

  • firstly, in a large bowl take 1 cup curd, 1 tsp ginger garlic paste, 2 chilli, 2 tsp lemon juice, 1 pack shan biryani masala and ½ tsp salt.
  • mix well combining all the ingredients well.
  • add 1 potato, 1 carrot, ½ capsicum, 5 beans, 3 tbsp coriander and 3 tbsp mint.
  • cover and marinate for 30 minutes or more.

how to make veg biryani gravy:

  • firstly, in a large kadai heat 2 tbsp ghee and 2 tbsp oil.
  • saute 1 onion, 1 tsp ginger garlic paste and saute well.
  • saute until the onions turn golden brown.
  • now add marinated vegetables and cook until the oil separates.
  • once the vegetables are almost cooked add 2 tbsp fried onion and mix well.
  • biryani base is ready.

how to make biryani rice:

  • firstly, rinse and soak 2 cups of basmati rice for 20 minutes.
  • in a large vessel take enough water.
  • also add 2 bay leaf, 2 inch cinnamon, 1 pod black cardamom, 2 pods cardamom, 1 javitri, 6 cloves and 1 star anise.
  • further add 2 tsp ghee, 1 tsp lemon juice, 1 tsp cumin, ½ tsp pepper and 2 tsp salt.
  • mix well and get to a rolling boil.
  • add in soaked rice and mix well.
  • boil the rice until it is almost cooked.
  • drain off the rice and keep aside.
  • how to layer for biryani in banana leaf:
  • firstly, in a banana leaf spread a ladleful of prepared biryani gravy.
  • add in almost cooked basmati rice.
  • then pour 2 tbsp saffron milk, 1 tbsp mint, 1 tbsp coriander, 1 tsp ghee and sprinkle biryani masala.
  • cover and seal using a toothpick.
  • now place the banana leaf into the steamer and steam for 30 minutes.
  • finally, enjoy veg biriyani recipe with raita and salan.

  • additionally, if you do not like too much spice, then reduce the biryani masala and add chilli powder.
