veg puff recipe | curry puff recipe | veg patties or vegetable puff recipe with detailed photo and video recipe. a popular snack, very similar to pie is prepared from puff pastry sheets. in other words, the puff’s are prepared from special sheets known as puff pastry sheets which is a layered sheet and sandwiched with butter or dalda.
i am a big fan of veg patties recipe and often i prepare these for our weekend evening snack. i typically prepare this recipe with the store bough puff pastry sheets as preparing is very time consuming and also very stressful. initially, i thought to share this recipe with the store bought pastry sheets, but i was getting several request for veg puff recipe with homemade pastry sheets. hence i decided to share both the recipes together in a single post. preparing puff pastry is very tiring and cumbersome process but but it would bring a smile and content with the end result of veg patties or vegetable puff.
furthermore, some important tips and suggestions for a perfect layered curry puff recipe. typically puff pastry sheets are prepared from dalda or vanaspati, however i have used pure butter in this recipe. using dalda can be thrifty and economical, but butter tastes better and adds nice flavour to veg puff. secondly, make sure the curry is dry and all the moisture is removed before filling it to pastry sheets. wet curry would turn puff’s to soggy and loose its shape. lastly, i have baked the puff in conventional oven, however it can also be deep fried in oil.

Ingredients
for dough:
- 3 cups maida / all-purpose flour / plain flour
- salt to taste
- 2 tbsp butter, unsalted
- cold water, as required
for butter dough:
- 400 grams butter, cold
- 2 tsp lemon juice / vinegar
- salt to taste
- ½ cup maida / all-purpose flour / plain flour
for stuffing:
- 2 tsp oil
- ½ tsp cumin seeds / jeera
- ½ medium sized onion, finely chopped
- 1 green chilli, finely chopped
- 1 tsp ginger-garlic paste
- ½ cup peas / matar
- ½ cup beetroot, finely chopped
- 1 carrot, finely chopped
- 5 beans, finely chopped
- ½ tsp turmeric / haldi
- ½ tsp kashmiri red chili powder / lal mirch powder
- salt to taste
- ½ tsp garam masala
- ½ tsp aamchur powder / dry mango powder
- 2 medium sized potato, boiled, peeled & mashed
- 2 tbsp coriander leaves, finely chopped
other ingredients:
- ¼ cup maida / all-purpose flour / plain flour, for dusting
- 2 tbsp butter
Instructions
- firstly, take the pastry sheet and roll to thin and uniform sheet.
- cut the sides and cut to rectangle pieces.
- place the prepared stuffing in the centre.
- and fold half, press and seal the sides.
- now place in the baking tray.
- brush the puff with butter for more golden colour.
- bake the puffs in preheated oven at 140 degrees for 25 minutes.
- finally, veg puffs or veg patties is ready to serve with tomato sauce.
how to make veg patties or veg puff with step by step photo:
veg puffs dough recipe:
- firstly, in a large mixing bowl take 3 cups of maida, salt and butter.
- crumble well with the dough.
- further add cold water and knead the dough.
- knead to smooth and soft dough adding water if required.
- cover with moist cloth rest for 15 minutes in fridge.
butter dough recipe:
- firstly, in a mixing bowl grate cold butter.
- further add lemon juice, salt and ½ cup maida.
- mix well to combine the ingredients well.
- rest for 15 minutes in fridge.
puff pastry sheets recipe:
- firstly, take the kneaded maida dough and knead slightly.
- roll gently to half cm thick sheet.
- dust with maida if required.
- further place the prepared butter dough in the centre making a block.
- wrap from all the four sides.
- place in a tray and cling wrap. rest for 15 minutes in fridge.
- after 15 minutes, dust with maida.
- press and flatten with the rolling pin.
- roll gently and dust maida if required.
- furthermore, fold into 2 folds dusting off excess maida present.
- wrap & rest for 15 minutes in refrigerator. repeat the same for 6 times.
veg puffs stuffing recipe:
- firstly, in a large kadai, heat oil and add cumin seeds.
- further add onions, ginger-garlic paste and green chilli.
- saute till the onions turn translucent.
- furthermore, add mix vegetables and salt.
- saute for 2 minutes.
- now cover and simmer for 10 minutes till the vegetables get cooked well.
- additionally add turmeric, red chili powder, garam masala and aamchur powder.
- saute for a minute till they turn aromatic.
- further add boiled potato and mix well.
- also add coriander leaves and keep the stuffing aside.
veg puffs preparation recipe:
- firstly, take the pastry sheet and cut half. reserve the rest for later use in fridge.
- roll to thin and uniform sheet.
- cut the sides and cut to rectangle pieces.
- place the prepared stuffing in the centre.
- and fold half, press and seal the sides.
- now place in the baking tray.
- brush the puffs with butter for more golden colour.
- bake the puffs in preheated oven at 140 degrees for 25 minutes.
- finally, veg puffs or veg patties is ready to serve with tomato sauce.
notes:
- firstly, always take cold water and cold butter. else the butter might ooze out out from the dough with rolling.
- also roll evenly and gently without making any holes.
- additionally, add vegetables of your choice to vary the stuffing.
- finally, store the prepared pastry sheets in freezer (ziplock bag) for 2 months and prepare veg puffs as required.
