as i was explaining, this recipe is very similar to the pinwheel samosa as it is made by rolling the wheat flour dough with vegetable stuffing. however, it is quite different from each other including the stuffing and taste. firstly, the stuffing in samosa is mainly potatoes, whereas in this recipe it is a combination of finely chopped vegetables. moreover, these vegetables are not cooked and are cooked while frying them. hence it makes it more effective and easy to prepare. secondly, the recipe as such does not need any side dish and can be served for different purposes. i personally like to serve these to the guests as it can easily amuse and surprise them.
furthermore, some more additional tips, suggestions and variants to this classical veg pinwheel tikki recipe. firstly, i have used just wheat flour for this recipe to make it healthy and tasty. however, you can also add maida and follow the 1:1 ratio to make it more colourful, attractive and tasty. secondly, i have gone with the shallow fry method for less oil consumption but it can also be deep-fried till crisp. moreover, do not overcrowd while deep frying and use small batches to fry these. lastly, you could use any kind of vegetable combination for this recipe. you may add other veggies like beans, beetroot, gobi and broccoli. but ensure to finely chop them so that it would be easy to stuff it up.

Ingredients
for dough:
- 2 cup wheat flour / atta
- 1 tsp chilli flakes
- ½ tsp salt
- water, for kneading
- 2 tbsp oil
for veg stuffing:
- 2 potato / aloo
- 1 carrot, grated
- ½ capsicum, finely chopped
- 5 tbsp cabbage, finely chopped
- ½ onion, finely chopped
- 2 tbsp coriander, finely chopped
- ½ tsp chilli powder
- ¼ tsp pepper powder
- ½ tsp chaat masala
- ½ tsp cumin powder
- ½ tsp salt
- oil, for frying
Instructions
- firstly, in a large bowl take 2 cup wheat flour, 1 tsp chilli flakes and ½ tsp salt. mix well.
- add water as required and knead the dough.
- also, add 2 tbsp oil and continue to knead.
- knead to a smooth and soft dough. tuck the dough and grease with oil.
- cover and rest for 20 minutes.
- meanwhile, to prepare the stuffing, in a large bowl take 2 potatoes.
- add 1 carrot, ½ capsicum, 5 tbsp cabbage, ½ onion and 2 tbsp coriander.
- also add ½ tsp chilli powder, ¼ tsp pepper powder, ½ tsp chaat masala, ½ tsp cumin powder and ½ tsp salt.
- mix well making sure all the ingredients are well combined.
- after the dough has rested for 20 minutes, knead again.
- pinch a ball sized dough and dust with wheat flour.
- roll slightly thick, dusting with more atta if required.
- now spread 3-4 tbsp of prepared mixture uniformly.
- make sure to leave the sides.
- roll tight making sure the mixture is intact.
- now cut into 2-inch pieces and flatten slightly.
- fry in hot oil keeping the flame on low.
- make sure to fry on both sides by flipping in between.
- fry until the tikki turns golden brown and crisp. drain off over kitchen paper.
- finally, enjoy veg roll tikki with tomato sauce or green chutney.
