SUGAR - 1.5 CUP

firstly, to prepare sugar syrup, in a large kadai take 1½ cup sugar, 2 pods cardamom and 1½ cup water.

SUGAR MELTS

stir and mix well until the sugar melts

BOIL - 5 MINUTES

now boil for 5 minutes or until the sugar syrup until it turns slightly sticky.

SAFFRON FOOD COLOUR

add ¼ tsp saffron food colour and mix well. keep aside.

BESAN - 1 CUP

to prepare boondi, in a large bowl take 1 cup besan and ¼ tsp saffron food colour. mix well

WATER - HALF CUP

now add ¾ cup water in batches

BEAT - 5 MINUTE

mix well and beat for 5 minutes forming a smooth flowing consistency batter

BAKING SODA 1/4 TSP

now add ¼ tsp baking soda and mix well

POUR BATTER SLOWLY

to prepare boondi, pour the batter slowly over skimmer or grater, keeping the oil hot

FRY UNIFORMLY

stir occasionally, until the boondi turns golden and crisp

PERFECT BOONDI READY

collect all the boondi and make sure to drain off the oil completely

BOONDI

transfer the boondi into the warm sugar syrup and dip completely

MIX GENTLY

cover and rest for 1 hour or overnight depending on the sweetness you prefer

cover and rest for 1 hour or overnight depending on the sweetness you prefer
