Besan Ladoo1

besan laadu | besan laddu | besan ladoo | chickpea ladoo – in microwave with step by step photo recipe. besan laadu is one of the most popular ladoo recipe prepared during diwali festival. i wanted to try since long, as its my favourite from childhood. but it pushed me only when my aunt insisted me to try it after she experimented in microwave. besan ladoo is usually fried in ghee on stove top and it needs to be stirred regularly in order to avoid burning of the flour.

my mom used to prepare the traditional way of frying the besan ladoo in ghee which tastes delicious. check out traditional way of besan ladoo recipe. but today i completely modified it and tried the recipe as shared by my aunt by just frying besan in microwave without ghee or oil in the initial steps. the texture and taste is so perfect  and we can also sense the unique taste as they are crunchy and does not stick to our teeth. my husband loves it when i make it this way at home. he keeps telling me that i should do it regularly.

Ingredients
  • 1 cup kadle hittu / besan / gram flour
  • 1 cup powdered sugar
  • 10-15 cashews
  • ½ cup ghee
  • ½ tsp green cardamom powder/ elaichi powder
Instructions ( 1 cup =255 ml)
  1. fry the besan in a microwave safe bowl in microwave. every minute you need to remove it from the microwave and mix with a spoon so that the flour shouldn’t either get burnt. uniform mixing is the key point. the frying has to be repeated until 10-12 minutes or until the raw smell of the flour is gone.
  2. transfer the fried besan to a mixing bowl immediately in order to avoid the burning of the flour due to heat of the vessel. let it cool down partially or completely for you to mix the sugar powder and elaichi powder.
  3. add melted ghee to the mixture. the quantity of the ghee is decided based on the necessity for it to bind together to form a ladoo.

notes:

  • roasting the flour will leave a raw smell of flour to the ladoos. so roast until you get a good smell and the color changes to dark golden.
  • do not use too much of ghee at one time. this may make the mixture very greasy and the flour may not bind well to shape the laddu or it might end up sticking to the serving plate.
  • almonds can also be used and it can be mixed with the mixture along with the cashews before rolling into ladoos.
  • the ladoos prepared in the same way with all purpose flour (maida) and wheat flour equally tastes good.
