bharwa karela recipe | stuffed karela recipe | stuffed bitter gourd recipe with detailed photo and video recipe. a popular punjabi cuisine delicacy which is typically consumed as a side dish to either dal rice combination or even to chapathi or roti. typically bitter melon, bitter gourd or bitter squash recipes are not liked by everyone, but this recipe is widely appreciated because of its mix combination taste.

i had almost forgotten this recipe, as it is quite challenging to get bitter gourd here in my place. bitter melon recipes are my favourite and my mother use to prepare a variety of recipes as we used to get fresh, tender bitter melons. however after moving to australia, i started to prepare karela recipes either with a frozen karela or with a chinese variety. even last time when i shared bitter gourd stir fry i used chinese variety. but last week luckily, i was able to find the indian variety of bitter gourd here in a nearby fresh food market and stuffed karela recipe was straight in my dinner menu.

even though the bharwa karela recipe is extremely simple, i would like to highlight few tips and recommendations. firstly, i have soaked the peeled bitter gourd in salt to reduce the bitterness. however if you like the bitterness taste, skip this step. secondly, i have used a tooth pick to lock the slit of bitter gourd so that the stuffing does not come out while frying. you can also use a thread to lock the slit before frying. lastly, you can also add ½ tsp of fennel powder to the stuffing masala to introduce aroma of sweet anise or licorice flavor.

Ingredients
  • 4 small sized bitter gourd / karela
  • 1 tsp salt, for marination
  • 1 cup water, to wash
for stuffing:
  • 2 tsp oil
  • 1 small onion, finely chopped
  • 1 tsp ginger-garlic paste / adrak-lasun paste
  • ½ tsp turmeric / haldi
  • 1½ tsp coriander powder / daniya powder
  • ½ tsp jeera powder / cumin powder
  • 1 tsp kashmiri red chili powder / lal mirch powder
  • salt to taste
  • 1 tsp aamchur / dry mango powder
  • ½ tsp garam masala powder
  • 1 tsp sugar (optional)
other ingredients:
  • 3 tbsp oil
  • 4 toothpick / thread, to tie
Instructions ( 1 cup =255 ml)
  1. firstly, prepare the stuffing by heating oil.
  2. add onions and ginger garlic paste.
  3. further add reserved karela skin and seeds.
  4. continue to saute for 2 minutes.
  5. additionally, add spices and saute on low flame.
  6. now add garam masala and sugar.
  7. mix well, and the stuffing is ready.
  8. take the washed, peeled and slit karela and stuff the stuffing.
  9. further, with the help of toothpick, secure tight.
  10. fry the stuffed karela in 3-4 tbsp oil on low flame.
  11. also make sure to fry the bitter gourd both sides.
  12. cover and simmer for 10 minutes stirring occasionally.
  13. further add leftover stuffing masala and mix gently.
  14. cover and simmer further for 2 minutes.
  15. finally, bharwa karela or stuffed bitter gourd is ready to serve with rice or chapathi.


how to make stuffed bitter gourd with step by step photo:

  1. firstly, in scape the skin of bitter gourd / karela with the help of knife / peeler.

  2. further, slit in centre with the help of knife.

  3. remove the seeds slowly, without damaging karela.

  4. now place the scrapped karela into a bowl.

  5. and also reserve the skin and seeds as they will be used in stuffing.

  6. sprinkle a tsp of salt over karela and rub it well. make sure to spread salt inside the karela too.

  7. rest for 30 minutes, as they help to reduce the bitterness.

  8. after 30 minutes, wash the karela with a cup of water.

  9. and also squeeze off the water completely and keep aside. drink the karela juice as they are healthy for diabetic patients.

  5. additionally, add ½ tsp turmeric, 1½ tsp coriander powder, ½ tsp jeera powder, 1 tsp chili powder, salt and 1 tsp aamchur.

  6. saute on low flame till the spices turn aromatic.

  8. mix well, and the stuffing is ready.

  9. take the washed karela and stuff the stuffing as much as possible.

  10. further, with the help of toothpick, secure tight. alternatively use thread to avoid masala from coming out.

  11. fry the stuffed karela in 3-4 tbsp oil on low flame.

  13. cover and simmer for 2 minutes, or till one side of karela gets cooked well.

notes:

  • firstly, use small and tender bitter gourd as they cook easily and taste great.
  • also, skip soaking in salt if you like the bitterness and also if you do not want to loose the nutritions.
  • additionally, cook the karela on low flame, else they burn and taste bad.
  • finally, bharwa karela or stuffed bitter gourd taste great when they are spicy and tangy.

  1. Great receipe….thank you for sharing. Can you tell me when we should use corn flour/all purpose flour/besan flour during cooking. Sometimes we mux corn flour and deep fry it sometimes we dip in all purpose flour and bread crumbs before frying….whats the difference??
