i had received a lot of request to prepare basic eggless cake recipes, especially with pressure cooker. i always use electric oven to prepare eggless vanilla cake, however today i am sharing you with a cake recipe prepared in cooker. while, the result was amazing and i really enjoyed the outcome. yet, i would still recommend electric oven for baking the cake and keep cooker option as plan b. i have also shared a eggless mug cake option prepared in microwave too.

furthermore, i have to admit that baking a cake in cooker is not straightforward option. this is my second attempt and i had failed badly in my first attempt. also, be careful while using the pressure cooker and make sure you do not apply the whistle to cooker. in addition, do not forget to remove the rubber or gasket before baking the cake in cooker. since we are not adding any water to cooker and we are replacing it with salt, the rubber would be damaged otherwise.

Ingredients
for cake batter:
  • 1 cup condensed milk / milkmaid
  • ¼ cup unsalted butter, at room temperature
  • 1 cup maida / all-purpose flour / plain flour
  • ¾ tsp baking soda
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla extract
  • 1 tsp vinegar
  • ¼ cup milk, or add as required
other ingredients:
  • 1 tsp butter
  • 1 tsp maida / all-purpose flour / plain flour
  • pressure cooker / oven
  • 1 cake tray / pan
  • 1 cup salt
Instructions ( 1 cup =255 ml)
cake batter recipe:
  1. firstly, in a large mixing bowl take 1 cup of condensed milk.
  2. additionally, add ¼ cup of butter which is at room temperature.
  3. furthermore, whisk condensed milk and butter for atleast 5 minutes,
  4. after that, sieve maida, baking soda, baking powder and salt.
  5. give a gentle mix.
  6. furthermore, add vanilla extract and vinegar.
  7. also add milk little by little and make a smooth batter.
baking cake in pressure cooker:
  1. firstly, grease the baking tray with butter.
  2. and dust with plain flour. tap off excess flour.
  3. furthermore, add a cup of salt to cooker and heat for 5 minutes.
  4. then carefully place the cake tray into the cooker, leaving gap around the edges.
  5. close the lid of cooker without keeping the gasket and whistle.
  6. allow to bake for around 40 minutes on low flame to medium flame.
  7. furthermore, insert a toothpick at the centre and check.
  8. remove from the cooker and carefully un-mould the cake.
  9. finally, serve immediately or store in a airtight container.

notes:

  • most noteworthy, make a batter  thick flowing consistency to make cake more spongy and soft.
  • furthermore, add dry fruits of your choice to make it more rich and tasty.
  • additionally, add 2 tbsp of coco-powder to make chocolate cake. note: decrease the amount of maida with proportion of coco powder you add.
  • moreover, if you do not want to use vinegar, then replace milk with buttermilk.
  • finally, you can bake in oven at 150 degrees C (300 degree F) for 30 minutes.

    Why is aluminum baking tray used all over?

      • Thanks a ton. Pls advise…….. The quantity of salt you mentioned will remain same or differs with the quantity of cake made. Also can the same salt be reused like we can reuse the sand .

  2. Can you show similar recipe using store bought cake mix but replacing the egg , that is by making it eggless using store bought mix.

  3. Hello Mam..I watched all your recipes very simple and easy to do.. I have one doubt can we replace Wheat flour instead of Maida?

    • Wheat flour cake can be prepared but cannot be replaced for this recipe. All the ingredients are well balanced for maida and not for wheat flour. I will soon share the wheat flour cake.

    • you can use vanilla essence but I would heavily recommend using extract. vanilla essence or flavourings are a chemically developed flavoring. you can use the same quantity though.

      Vinegar is optional.. however it helps to make cake more moist and spongy… you can replace with few drops of lemon juice
