However, it comes with a baggage high in calories which is termed as unhealthy if eaten or consumed in big amounts. But the same cake can be made healthy and one such healthy cake recipe is ragi cake or finger millet cake.

Well, I am a big fan of ragi recipes, and I guess it is quite evident with the number of posts I have posted on my blog. Yet, it took me a lot of time to post this healthy cake recipe. The main reason is the taste of the cake. Honestly, the cake prepared from ragi is dense due to the nature of the finger millet. When compared to the traditional cakes which can be light and spongy, thus making it more favorable. But I was getting several requests to post this simple cake with the basic ingredients, eggless and particularly without an oven. The technique I have used is very simple using a pressure cooker. It does not mean, it cannot be baked in an oven, but using a pressure cooker is more convenient. Do try this recipe and I am sure you would certainly enjoy it.

Furthermore, some more related and additional tips, suggestions, and variations to the ragi cake recipe. Firstly, fine and best-quality ragi flour is mandatory for this recipe. Most of the finger millet flour turns into lumps when mixed with wet ingredients. Avoid any stale less fresh flour. Secondly, to make it healthy, I have used jaggery as an alternative to sugar. Sugar is an ideal choice best texture and taste, but not a healthy option. Lastly, in this recipe, I have not shown or used any frosting and served it as a plain sponge cake. But you may add any type of frosting as per your preference.

Ingredients
  

  • 1 cup jaggery, powdered
  • ½ cup curd
  • ¼ cup oil
  • cup milk
  • 2 cup ragi flour
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • pinch salt
  • ¼ tsp baking soda
  • 1 tsp baking powder

Instructions
 

  • Firstly, in a large bowl take 1 cup jaggery, ½ cup curd, ¼ cup oil, and ½ cup milk.
  • Whisk and mix well making sure everything jaggery melts completely.
  • Add 2 cup ragi flour and 2 tbsp cocoa powder.
  • Also add 1 tsp vanilla extract, pinch salt, ¼ tsp baking soda, and 1 tsp baking powder.
  • Mix well making sure everything is well combined.
  • Further, add milk as required and mix until the batter turns silky smooth consistency.
  • Transfer the cake batter to a cake mold
  • Also, tap twice to level up uniformly and remove any air bubbles if present.
  • Place the cake pan into a preheated cooker. To prepare the cake in a pressure cooker add 2 cups of salt and close the lid of the cooker without keeping the gasket and whistle. heat for 5 to 10 minutes. As a result, gives a preheated oven atmosphere.
  • Cover and cook on a medium flame for 45 minutes. You can alternatively, preheat and bake at 180-degree Celsius for 45 minutes.
  • Insert a toothpick and check if the cake has baked completely.
  • Cool the cake and then unmold the Ragi chocolate cake.
  • Finally, cut the Ragi Cake into pieces and enjoy.
