There are many types of cake which mainly differ in the way the cake is baked and the set of ingredients used in it. One such easy and simple our own Indian cuisine-inspired cake recipe is fruit and nut cake known for its rich fruity flavor.

As I was explaining earlier the recipe is slightly different from the popular Christmas Plum cake. The major difference is the soaking part. In this recipe, I would call it an instant recipe. Whereas the traditional plum cake requires the soaking of nuts and dried fruits in red wine or grape juice. Also, in this, I have prepared a caramelized sugar syrup and used it as one of the wet ingredients. This helps to give you the caramelized flavor and also gives a dark red color using white sugar. This may be seen as an extra step compared to adding sugar, but caramelized sugar syrup takes the taste of the cake to the next level. Do try this simple effective no oven cake and I am certain, you and your family will love it.

Ingredients
  

  • 3 tbsp raisins
  • 5 apricot, chopped
  • 2 fig, chopped
  • 2 dates, chopped
  • 3 tbsp tutti frutti
  • 2 tbsp cranberries
  • 10 cherry, chopped
  • 1 cup orange juice
  • ¾ cup sugar
  • ¼ cup hot water
  • ½ cup oil
  • ½ cup curd
  • 1 tsp vanilla extract
  • 2 cup maida
  • 2 tbsp milk powder
  • ¼ tsp cinnamon powder
  • ¼ tsp ginger powder
  • ¼ tsp salt
  • ½ cup milk
  • 2 tbsp cashew, chopped
  • 2 tbsp almonds, chopped
  • 2 tbsp walnuts, chopped
  • 1 tsp baking powder
  • ¼ tsp baking soda

Instructions
 

  • Firstly, in a pan take 3 tbsp raisins, 5 apricots, 2 figs, 2 dates, 3 tbsp tutti frutti, 2 tbsp cranberries, and 10 cherries.
  • Add 1 cup orange juice and cook on low flame.
  • Cook until the dried fruits turn soft and juicy. keep aside to cool completely.
  • To prepare the caramelized sugar, in a thick-bottomed pan take ¾ cup sugar.
  • Keep stirring on a low flame until the sugar melts.
  • Make sure to keep the flame on low and keep stirring to prevent it from burning.
  • Sugar melts and turns golden brown. do not burn the caramelized sugar.
  • Pour in ¼ cup hot water and mix well until it is well combined, and prevent sugar syrup from turning crystal. keep aside to cool completely.
  • In a large bowl, take ½ cup oil, ½ cup curd, 1 tsp vanilla extract and prepared caramelized sugar.
  • Using a whisk, mix well making sure everything is well combined.
  • Now place a sieve, and add 2 cup maida, 2 tbsp milk powder, ¼ tsp cinnamon powder, ¼ tsp ginger powder and ¼ tsp salt.
  • Sieve all the dry ingredients well.
  • Mix the flour with wet ingredients.
  • Also, add ½ cup milk and mix forming a thick batter.
  • Now add in the prepared dried fruit mixture, 2 tbsp cashew, 2 tbsp almonds, 2 tbsp walnuts.
  • Mix well making sure everything is well combined.
  • Furthermore, add 1 tsp baking powder and ¼ tsp baking soda. mix well.
  • Pour the cake batter into the tin lined with baking paper.
  • You can bake in the cooker or large kadai with some salt. Cover and simmer for 45 minutes or until the cake is cooked well. If you baking in the oven, bake at 180 degrees celcius for 45 minutes.
  • Cool the cake completely, and slice it into pieces.

  • Also, I have cooked the dried fruits in orange juice to skip the soaking time. If you have enough time, then make sure to soak the dried fruits for at least 8 hours.
