ice cream cake recipe | ice cream bread recipe | vanilla ice cream cake with detailed photo and video recipe. basically a baked cake recipe prepared with just 3 ingredients, i.e melted ice cream, all purpose flour and baking powder. it is a simple and hassle free cake recipe which can be easily used for occasions like birthday or even anniversaries.

to be honest, i am not a huge fan of ice cream cake recipe but i have to admit it is one of the simplest eggless cake recipes. the main advantage of ice cream bread recipe is there isn’t much hassle to prepare the cake batter. in this recipe i have added maida and baking powder to the melted vanilla ice cream. but if you have self raising flour, you can totally skip the baking powder and salt; making it even more easier. in other words, self raising flour is the combination of maida and baking powder + salt with proper quantities.

ice cream cake recipefurthermore some important tips and recommendations for a ideal spongy ice cream cake recipe. firstly, i have used plain vanilla ice cream in this recipe with the combination of maida which would yield a simple vanilla flavoured cake. the same procedure can be applied with other ice creams to prepare the corresponding flavour ice cream. for example, chocolate, butterscotch and black current to name few. secondly, i have not added extra sugar apart from the sugar present in the ice cream. if you feel, it is less, add ¼ cup of sugar or even condensed milk to cake batter. lastly, i have used eggless flavoured vanilla ice cream, but it can also be prepared with egg flavoured ice cream too.

Ingredients
  • 2 cups ice cream, vanilla / any flavour (use full cream ice cream. low-fat or dairy-free ice cream do not work)
  • 1½ cups maida / plain flour / refined flour / all-purpose flour
  • 2 tsp baking powder
  • pinch of salt
Instructions ( 1 cup =255 ml)
  1. firstly, in a large mixing bowl take 2 cups vanilla ice cream. use any flavoured ice cream but low-fat or dairy-free ice cream do not work.
  2. allow it to melt naturally. alternatively, defrost to melt faster.
  3. add in 1½ cups maida.
  4. also add 2 tsp baking powder, pinch of salt. (avoid baking powder and salt if using self raising flour).
  5. mix well to form thick batter. do not worry if the batter is sticky.
  6. transfer the ice cream cake batter into bread loaf lined with baking paper. (i have used bread loaf - width: 12 cm, height: 6 cm, length: 26 cm)
  7. level it up with a spatula.
  8. further bake the cake in preheated oven at 180 degree celsius or 356 degree fahrenheit for 25 to 35 minutes. to bake in microwave or cooker check out the notes section below.
  9. to check the cake has baked completely, always insert a toothpick at the centre and see if it comes out clean. else bake for 5 more minutes.
  10. cool down the cake completely. also transfer the cake to cooling rack to cool faster.
  11. now slice the cake once cooled completely.
  12. finally, enjoy eggless ice cream cake or store in a airtight container for atleast a week.

notes:

  • firstly, use any flavoured ice cream but do not use low-fat or dairy-free ice cream.
  • also add food colour, chocolate chips or any sprinklers to look attractive.
  • additionally, if the cake is turning dark at the top and uncooked in center, cover with aluminium foil and continue baking.
  • furthermore, to bake in microwave convection mode pre heat and bake at 180 degrees for 30 minutes. and to bake in cooker check out how to bake in cooker.

  1. Hi i tried this recipe as given but somehow he cake didnt come out well.. it did not rise well and even the taste was not very sweet. What could have gone wrong. I used the regular round baking tray… am suggestions plz.
