probably, kachoris must have been originated in either rajasthan or uttar pradesh. due to the lack of documentation it is still not clear where exactly did the kachoris originated. but it is strongly believed that, kachoris where the favourite snack recipe before the inception of samosas in india. while samosas have taken the number one spot, yet kachoris are stil popular and has a huge fan following in rajasthan, delhi and uttar pradesh.

i have been always a huge fan of matar kachoris and moong dal kachori. hence i am starting the collection of kachori recipes collection with moong dal kachori. my love to kachoris started during my annual trip to rajasthan  few years back. i was really surprised and astonished to learn the varieties of kachoris prepared and served all over rajasthan.

Ingredients
for stuffing:
  • ¼ cup moong dal
  • ½-¾ tsp chilli powder, adjust to your spice level
  • ¼ tsp turmeric powder
  • ½ teaspoon coriander powder
  • ¾ tsp fennel seeds, crushed
  • ¼ teaspoon cumin powder / jeera powder
  • ½ tsp dry mango powder / amchur powder
  • ¼ tsp garam masala
  • a pinch of hing
  • 1 tsp sugar
  • salt to taste
  • 4-5 tsp water, or as required
for dough:
  • 1 cup maida / plain flour / all-purpose flour
  • 1 tsp semolina / rava / sooji
  • 3 tbsp oil
  • salt to taste
  • pinch of soda (optional)
  • water to knead to dough
  • oil for deep frying
Instructions ( 1 cup =255 ml)
moong dal kachori stuffing recipe:
  1. firstly, in a large kadai dry roast moong dal and powder them
  2. add chilli powder, turmeric powder, coriander powder, cumin powder, crushed fennel seeds, dry mango powder.
  3. also add garam masala, hing, sugar and salt to taste and mix well.
  4. add water and mix well.
moong dal kachori dough recipe:
  1. firstly, in a large mixing bowl add 1 cup of maida, rava and oil and salt to taste.
  2. crumble the flour well with oil.
  3. in addition, add water little by little and knead to form a dough and cover them for 15 mins with wet cloth
  4. now pinch a small lemon sized ball and flatten it.
  5. now scoop 1 tsp of prepared moong dal stuffing.
  6. get the edges together and form a bundle.
  7. furthermore, gently press the edges and flatten.
  8. deep fry kachoris.
  9. then press with the spoon to puff up.
  10. finally, serve moong dal kachori

moong dal kachori stuffing recipe:

  1. firstly, in a large kadai take one-fourth cup of moong dal and dry roast.

  2. dry roast on medium flame for 2 minutes or till they turn fragrant.

  3. furthermore, cool down completely and coarsely powder them.

  4. then turn off the flame and transfer to the pan / bowl.

  5. in addition, add spices like chilli powder, turmeric powder, coriander powder,  cumin powder, crushed fennel seeds, dry mango powder.

  6. also add garam masala, hing, sugar and salt to taste.

  7. moreover, give a good mix till spices gets mixed uniformly with moong dal.

  8. furthermore, add water little by little and mix.

moong dal kachori dough recipe:

  1. firstly, in a large mixing bowl add 1 cup of maida / all purpose flour.

  2. in addition add rava. adding rava makes kachori stay crispy longer.

  3. also add 3 tbsp of oil.

  4. furthermore, add salt to taste.

  5. crumble the flour well with oil.

  6. in addition, add water little by little and knead.

  7. knead well till you form a smooth and soft dough.

  8. furthermore, cover with moist cloth and keep aside for 15 minutes.

  9. now pinch a small lemon sized ball and flatten it.

  10. with the help of both thumbs start pressing the edges and create a dent in centre.

  11. now scoop 1 tsp of prepared moong dal stuffing.

  12. get the edges together and form a bundle.

  13. close the top by pressing and flattening.

  14. furthermore, gently press the edges and flatten to form a poori size.

  15. when the oil is medium hot, add one kachori.

  16. do not touch it for a minute or till they float. then press with the spoon to puff up. turn around and fry the kachori till golden brown all over.

  17. finally, serve khasta kachori as it is or with green chutney.

notes:

  • firstly, fry kachoris on medium flame else they will not be crispy.
  • furthermore, you can use rolling pin to flatten kachori.
  • additionally, you can alter the filling according to your preference.
  • moreover, kachoris are perfect when you oil is added while kneading dough.
  • finally, you can store these in a airtight container and prepare kachori chat.
