 mumbai vada pavvada pav recipe | mumbai vada pav recipe with step by step photo and video recipe. vada pav, sometimes spelled wada pav or vada paav or vada pao or wada pao, is a vegetarian street food. this street food is very special to maharashtra and is also a staple food of marathi people. vada pav is also referred as indian or desi burger. basically, the fried vada is placed in between of vada to make a sandwich.

pav is a type of indian bread (aka dinner rolls). pav is easily available in india. i live in australia, and was searching a lot for pav as i desperately wanted to have vada pav. later i got to know pav in western countries are called as dinner rolls, so you don’t have to worry if you are away from india. you can still have vada pav straight from your kitchen.

furthermore, i learnt this simple recipe from my uncle. he is still leaving in mumbai, and he lives near to juhu beach. according to him, juhu beach is paradise for street food lovers. perhaps, he must have learnt those amazing chaat recipes over there. in addition to vada pav, he prepares amazing bhel puri, samosa chaat and also dabeli recipe. certainly, when it come to chaat recipes, he is my guru.

Ingredients
for spiced potato stuffing:
  • 2 potatoes, boiled
  • 3 garlic, finely chopped
  • 2 chillies, finely chopped
  • ½ tsp mustard seeds
  • pinch of asafoetida / hing
  • ½ tsp turmeric powder
  • few curry leaves
  • few coriander leaves, chopped
  • 1 tsp lemon juice
  • salt to taste
for batter:
  • 1 cup besan / gram flour
  • pinch of asafoetida / hing
  • ½ tsp turmeric powder / haldi
  • ½ tsp chilli powder
  • a pinch of baking soda
  • water as required
  • salt to taste
Instructions ( 1 cup =255 ml)
preparing the batata vadas:
  1. heat oil. add ½ tsp mustard seeds, hing and allow them to crackle.
  2. then add curry leaves and turmeric. stir and saute.
  3. now add 6 to 7 garlic and 1 to 2 green chilies chopped.
  4. mash the potatoes into the tempering and give a nice mix.
  5. add chopped coriander leaves, lemon juice and salt.
preparation of batter:
  1. in a mixing bowl, make a smooth batter of besan, turmeric powder, chilli powder, asafoetida, baking soda, salt and water.
frying vadas:
  1. dip and coat the potato balls with the batter.
  2. gently drop them into hot oil.
  3. stir occasionally and deep fry these batata vadas till they turn golden brown.
  4. drain them on kitchen paper towels.
assembling vada pav:
  1. slice the pav ¾; without breaking it into two.
  2. spread the green chutney on one side.
  3. add the dry garlic chutney on other side.
  4. place the prepared vada between the pav.
  5. serve vada pav immediately with some fried green chillies.

preparing the batata vadas:

  6. mix everything well and then make small balls.

  2. the batter should not be too thick or thin.

notes

  • firstly, adjust the amount of chutneys to your choice.
  • in addition, keep the vadas in flat shape before deep frying them.
  • furthermore, apply green chutney, red garlic chutney or dry garlic chutney to pav before stuffing with vada.
  • finally, deep fry the red chilli and place in between of the vadas.
