moreover, korma recipe is favorite curry recipe to my family like any other south indian family. however, i personally started liking this recipe recently. i was attending one my konkani freinds’s marraige function in udupi. combination of ghee rice and veg kurma is the entree in any konkani marriages in south canara. initially, i was skeptical about this weird combination. however, i was already a fan of this recipe after my first bite.
furthermore, i would like to highlight the variations to veg kurma recipes. coconut based vegetable korma is south indian delicacy. where as in north india, vegetable kurma is prepared from yogurt and boiled vegetables. however, cashew paste remains constant on both the versions. also, in some of the variations, you can find roasted bengal gram or roasted chana dal added while grounding. however, roasted chana dal is the economical version and is a replacement for costly cashews.

- ยฝ-ยพ cup coconut fresh / desiccated
- 15 cashews
- 1 garlic clove
- 1 inch ginger
- 3 green chilli
- fistful coriander leaves
- ยฝ tsp fennel seeds / saunf
- 1 tsp coriander seeds
- 2 tsp poppy seeds / gasgase
- ยฝ cup water to blend
- ยฝ onion finely chopped
- 1 to mato finely chopped
- 1 carrot cubed
- 4 beans chopped
- ยผ cup peas fresh / frozen
- 10 cauliflower / gobi florets
- 1 potato chopped
- 2 tsp oil
- 1 inch cinnamon stick
- 3 cloves
- ยฝ tsp pepper
- pinch turmeric powder
- ยพ tsp kashmiri chilli powder
- salt to taste
- 1 cup water
- few coriander leaves to garnish
- firstly, take all blending ingredients.
- blend to smooth paste adding hot water as required.
- firstly, take a large kadai along with 2 tsp of oil.
- further add cinnamon stick, cloves and pepper. saute till they turn aromatic.
- now add onions and saute till the onions turn slightly golden brown.
- furthermore, add tomatoes and saute till the tomatoes turn soft.
- time to add vegetables of your choice.
- also add salt, turmeric powder and chilli powder.
- saute for a minute.
- further add a cup of water and cook covered for 15 minutes.
- now add prepared masala paste earlier and mix well.
- adjust the consistency by adding water as required.
- further, simmer for 10 minutes till the raw smell of coconut disappears.
- finally, garnish with chopped coriander leaves.
how to make veg kurma recipe with step by step photo recipe:
masala paste recipe:
- firstly,ย take all blending ingredients:ย coconut, cashews,ย garlic, ginger,ย chilli andย coriander leaves.
- also addย fennel seeds, coriander seeds,ย ย poppy seeds.
- finally, blend to smooth paste adding hot water as required. keep aside.
veg kurma recipe:
- firstly, take a large kadai along with 2 tsp of oil.
- further addย cinnamon stick,ย cloves andย pepper. saute till they turn aromatic.
- now add onions and saute till the onions turn slightly golden brown.
- furthermore, add tomatoes and saute till the tomatoes turn soft.
- time to add vegetables of your choice. addย carrot, beans, peas, cauliflower and potato.
- also add salt, turmeric powder and chilli powder.
- saute for a minute.
- further add a cup of water and cook covered for 15 minutes. make sure the veggies are cooked well.
- now add prepared masala paste earlier and mix well.
- adjust the consistency by adding water as required.
- further, simmer for 10 minutes or till the raw smell of coconut disappears.
- finally, mix well and serve by garnishing with chopped coriander leaves along with rice or roti.
notes:
- firstly, add veggies of your choice.
- furthermore, cook the veggies completely before adding masala. else its difficult for veggies to cook.
- also, adjust the chillis according to the spice level.
- additionally, if you do not have cashews, replace with roasted chana dal.
- finally, dry roast spices before blending if you prefer.

The receipe was just great. However , we tried a little variation as we cooked vegetables in a pressure cooker for one whistle while the coconut masala and onion tomoto was being prepared.
