corn vada recipe | sweet corn vada | sweet corn garelu with detailed photo and video recipe. an easy and extremely popular south indian or particularly an andhra snack made with sweet corn kernels. the recipe has a very similar taste and texture to the other south indian popular lentil base vada, yet has its own taste and uniqueness via sweet corn kernels. the snack has a very similar use to the other vada and can be shared as evening snack or as a side to lunch or dinner.
i have posted numerous snack recipes prepared from sweet corns. these typically fall under the cutlet or the indo chinese recipes categories. however, this recipe is unique where sweet corn kernels are used to make a south indian snack. typically south indian snacks are made with lentils or with a different type of flours. there are hardly any recipes made out of sweet corn kernels. hence sweet corn vada recipe makes it a unique and tasty combination. having said that, sweet corn garelu can be tricky for many. if you think that the corn vade would be crisp like other south indian vadas, then you might get disappointed. this mainly due to the use of besan or gram flour. but there should not be any disappointment for taste and flavour.
furthermore, before jumping into the recipe, some tips, suggestions and variations for sweet corn vada recipe. firstly, as i mentioned earlier, the recipe is mainly made with gram flour to hold the sweet corn kernels. yet it does contain rice flour for the crispy texture. you can actually increase or decrease the crispiness with rice flour quantity. secondly, while you are deep-frying the vada, ensure to have medium to low flame. this is not just cook it evenly, but also to avoid corn exploding while deep frying. lastly, the vada would soon lose its crispiness once it rested. hence serve these immediately once it is deep-fried or preserve these in a preheated oven.

corn vada recipe | sweet corn vada | sweet corn garelu
Ingredients
- 1½ sweet corn, fresh/frozen
- 2 tbsp carrot, grated
- ½ onion, finely chopped
- 1 chilli, finely chopped
- 1 inch ginger, finely chopped
- few curry leaves, finely chopped
- 2 tbsp coriander, finely chopped
- ¼ tsp turmeric
- ¼ cup besan/gram flour
- ¼ cup rice flour
- ½ tsp salt
- oil, for frying
Instructions
- firstly, in a small blender take 1½ sweet corn. you can use fresh or frozen sweet corn.
- blend to a coarse paste without adding any water.
- transfer the corn paste to a large bowl.
- add 2 tbsp carrot, ½ onion, 1 chilli, 1 inch ginger, few curry leaves and 2 tbsp coriander.
- also add ¼ tsp turmeric, ¼ cup besan, ¼ cup rice flour and ½ tsp salt.
- mix well making sure everything is well combined.
- squeeze and mix forming a soft dough.
- now grease hands with oil and pinch a ball sized dough.
- flatten slightly forming a vada.
- deep fry in hot oil stirring occasionally.
- fry on medium flame until the vada turns golden brown and crisp.
- drain off the vada onto the kitchen paper to remove excess oil.
- finally, enjoy sweet corn vada with green chutney.
