carrot delight recipe | soft & tender carrot barfi | carrot sweet recipes with detailed photo and video recipe. an interesting and tasty carrot dessert recipe made with carrot puree, cornflour and sugar. unlike other traditional barfi recipes, it has a soft and chewy texture similar to a corn flour halwa, but has its own flavour and taste. it can be made for any occasion, celebrations or even for the festival feast and takes only 20 minutes to prepare from scratch.
as i was explaining the texture and the look is very similar to any halwa recipes. it is chewy, soft and gelly. but this cannot be called halwa as the name is already taken by the other popular indian carrot halwa. the other near available indian name is barfi, which does not tick all the boxes, yet it is termed as barfi recipe. having said that it is also popularly known as carrot delight which is more appropriate as this recipe sits in between the halwa and barfi. moreover, the coconut coating applied on top of the sweet, makes it even more desirable. it balances the carrot flavour to yield a subtle tasty sweet. the desiccated coconut can be easily replaced with other options like dry fruits, chocolate grate or even mawa toppings for other variations.
furthermore, i would also like to add some more tips, suggestions and variations to the carrot delight recipe. firstly, if you prefer to have a softer and more chewy texture, you can achieve it by turning off the heat early. i personally like a chewy one, with neither hard nor soft. secondly, you may shape this sweet as per your preference. you may shape it like gulab jamun, square barfi, donut or even like laddu shape. lastly, i personally like the coconut toppings for this sweet with a combination of carrot and coconut flavour. but you may very well have other toppings, like pista powder, badam powder or even the milk chocolate grate for a different flavour.

Ingredients
- 500 grams carrot
- ½ cup sugar
- ¼ cup corn flour
- 1 cup water
- 2 tbsp ghee
Instructions
- firstly, in a pressure cooker place a steamer and take 500 grams chopped carrot.
- pressure cook for 2 whistles or until carrots is cooked well.
- cool completely and transfer to the mixi. blend to smooth paste.
- make sure to pass the carrot puree into the filter making sure the puree is smooth.
- add ½ cup sugar, ¼ cup cornflour and 1 cup water.
- whisk well making sure everything is well combined.
- now transfer the carrot mixture to a large kadai.
- keep stirring continuously, keeping the flame on medium.
- after 5 minutes, the mixture will start to thicken.
- now add 2 tbsp ghee and continue to cook.
- keep stirring until the mixture will start to hold shape and separate the pan.
- transfer the mixture to a box lined with parchment paper.
- level up making sure it is of uniform thickness.
- rest for 1 hour or until the dessert is set well.
- cut into the shape of your choice and roll into desiccated coconut.
- finally, enjoy carrot delight topped with more nuts.

notes:
- firstly, make sure to keep stirring else the mixture will stick to the pan and burn.
- also, to get bright orange colour, you can add few drops of orange food colour.
- additionally, adding ghee is optional. however, it will give a nice glossy shine.
