It is easy, instant and can be easily prepared with all the basic ingredients available in any kitchen pantry. One such hugely popular and healthy instant dosa recipe is jowar dosa recipe which is known for its crisp and flaky texture due to the thin watery dosa batter consistency.
I have posted quite a few instant dosa recipes, yet I always get a lot of requests to post something new or innovative instant dosa recipes. However, I was slightly confused with jowar dosa as it can be prepared, either way, in instant or traditionally fermented style. I went with the instant way as it is easy, quick and easy to prepare and just pour on a hot dosa pan. In other words, I have basically inspired this dosa recipe from my previous post on rava dosa recipe. It carries the same texture and dosa batter consistency with the same set of other ingredients like onion, herbs and spices. However, you may not compare or get a crisp texture like rava dosa, but I personally felt it would taste much better. Do try this variation and let me know what you think when compared to rava dosa.
In addition, I would like to add some more related tips, suggestions and variants to the jowar dosa recipe. Firstly, in this recipe, I have just used jowar flour with other spices and herbs for the instant batter. Well, you may add half a cup of rava and rice flour to the same batter to make it more crisp and flaky. Secondly, I would heavily recommend you to use a non-stick dosa pan to prepare these crisp dosas. You may also use a cast iron dosa pan, but depending upon the smoothness, it may either come off easily or stick to the bottom. Lastly, the ideal side dish or chutney recipe for this recipe is a spicy tomato onion chutney recipe but can be relished with any spicy coconut chutney. You may also serve it with additional sambar and chutney podi to spice it up.

Jowar Dosa Recipe | how to Make Instant Jonna Dosa or Jolada Dose
Ingredients
- 1½ cup jowar flour / sorghum flour
- ½ tsp salt
- 4 cup water
- 1 onion, finely chopped
- 2 tbsp coriander, finely chopped
- few curry leaves, chopped
- 2 chilli, finely chopped
- 1 tsp cumin
- ½ tsp pepper, crushed
- oil, for roasting
Instructions
- firstly, in a large bowl take 1½ cup jowar flour. make sure the flour is fresh, else the dosa will not be crispy.
- add ½ tsp salt and 4 cup water.
- whisk and mix well making sure there are no lumps.
- add 1 onion, 2 tbsp coriander, few curry leaves, 2 chilli, 1 tsp cumin, and ½ tsp pepper.
- mix well and rest the batter for 10 minutes.
- after 10 minutes, you can see the batter is watery. you can adjust the consistency by adding water if required.
- when the pan is super hot, pour the batter on the pan.
- spread 1 tsp oil and allow to roast for 3 minutes or until the dosa turns crisp.
- finally, enjoy crispy jowar dosa recipe with chutney.

- firstly, you can add ¼ cup rice flour to make the dosa extra crisp.
- also, adjust the consistency of the batter by adding water as required. if the batter is thick, then the dosa will be soft.
