I come from south India and south Indian breakfast recipes are one of the important aspects of our day to day lives. specifically, idli and dosa recipes are most frequently prepared almost every week. however, I personally have 2 different recipes with a different set of ingredients for individual dosa and idli recipes. depending upon the crisp level the ratio of the ingredients changes and varies. well, that’s my personal preference but I also do acknowledge the fact that some people prefer to have just one solution for idli, dosa or south Indian batter-based recipes. this can be achieved by combining 2 recipes or meeting an ingredients ratio point that is suitable for both. that’s what I have done in this and I guess that’s what is followed in most of the store-bought batter recipes. I personally prefer this recipe when I like to have soft idli and dosa, but note that you may not be able to use this for crisp dosa.

2 in 1 Multipurpose Batter For Morning Breakfast furthermore, some more additional tips, suggestions and variants to the idli dosa batter recipe. firstly, I would like to reiterate that, this recipe is done by merging 2 recipes and hence may not get 100% of idli or dosa. if you need something authentic and particular you may have to follow the authentic recipe for it. secondly, irrespective of ingredients ratio, the idli and dosa batter have to be properly fermented to get soft and spongy idli or even dosa. if you are living in a cold climate keep the batter in a dry and warm place for proper fermentation. lastly, in addition to idli and dosa, you may also use this to make appam, appe and even vegetable uttapam as an alternative.

notes:

  • firstly, using idli rice makes idli and dosa very soft. so recommend using idli rice itself and not sona masuri rice.
  • also, if you are looking for an alternative for poha, then you can use murmura.
  • additionally, add salt just before preparing dosa or idli as it helps to keep the batter fresh.
  • finally, idli dosa batter recipe can also be used to prepare uttapam, paniyaram or punugulu.
