well, to be honest, i did not plan this recipe during this navaratri fasting season, but somehow it got aligned with it. basically, i wanted to post a crisp and instant dosa recipe and i realised that i have not used or prepared sabudana pearls to prepare instant dosa. so thought of using it, but i soon realised that it is the navaratri fasting season, so adapted the recipe accordingly. in other words, i have prepared this recipe using boiled potato puree and sama rice as an alternative to rava or semolina. in addition to it, i have also shared an upwas friendly chutney recipe, which is an ideal choice for this dosa. you can easily serve this chutney with any choice of upwas recipe or snack, if not any recipe. do try this recipe, and do let me know your thoughts about it.

Ingredients
 

for vrat ka sabudana dosa:

  • ½ cup sabudana
  • ½ cup sama rice
  • 1 potato (boiled)
  • water
  • ¼ cup curd
  • 2 chilli (finely chopped)
  • 1 inch ginger (finely chopped)
  • 2 tbsp coriander (chopped)
  • 1 tsp cumin
  • ½ tsp pepper (crushed)
  • 2 tbsp peanut (roasted & crushed)
  • 1 tsp salt

for vrat ki chutney:

  • ½ cup coriander
  • ½ cup mint
  • 1 inch ginger
  • 2 chilli
  • ½ lemon
  • 2 tbsp peanut (roasted)
  • ½ tsp salt
  • ¼ cup water

Instructions
 

how to make vrat ka sabudana dosa:

  • firstly, in a pan, dry roast ½ cup sabudana for 4 to 5 minutes or until the sago turns aromatic.
  • cool completely, and transfer to the mixer jar.
  • also, add ½ cup sama rice.
  • grind to a fine powder and transfer to a large bowl.
  • also, grind 1 potato with water to smooth paste.
  • transfer the potato paste to the same bowl.
  • add ¼ cup curd, 2 chilli, 1 inch ginger and 2 tbsp coriander.
  • also add 1 tsp cumin, ½ tsp pepper, 2 tbsp peanut and 1 tsp salt.
  • mix well making sure everything is well combined.
  • add 2 cup water and mix well forming a lump-free batter.
  • cover and rest for 20 minutes.
  • after 20 minutes, the sabudana and sama rice has absorbed water and the batter thickens slightly.
  • add 1 cup of water and mix well forming a watery consistency batter.
  • when the pan is super hot, pour the batter on the pan.
  • spread 1 tsp ghee and allow to roast for 2 to 3 minutes or until the dosa turns crisp.
  • finally, enjoy the crispy sabudana dosa recipe with spicy vrat ki chutney.

how to make vrat ki chutney:

  • firstly, in a mixer jar take ½ cup coriander, ½ cup mint, 1 inch ginger and 2 chilli.
  • also add ½ lemon, 2 tbsp peanut, ½ tsp salt and ¼ cup water.
  • grind to smooth paste
  • finally, vrat ki chutney is ready to enjoy.
