Raita Recipe | Authentic Raita For Pulao & Biriyani with step-by-step photo and video recipe. Indian meals and recipes are known for their range of spices used to prepare a spicy and flavored meal. Typically, these spicy meals are balanced with an accompaniment that elevates the flavor and also lowers the spice effect. One such popular accompaniment is yogurt or curd-based raita known for its creamy and digestive benefits when served as an accompaniment.
As I explained earlier, there are different types of raita recipes across India. Preparing a simple vegetable or herb-based raita is very simple with basic ingredients. The curd-based dip can be made with any type of vegetable, herb, or range of spice mix. Yet few mandatory or important raita recipes hit the menu every time. The most common is cucumber raita where cucumber is finely chopped and mixed with whisked yogurt. The other most common and basic is onion and tomato raita with creamy curd. In addition, the other basic or preferred one is pomegranate raita. All these raita are topped with roasted jeera, adding additional nutrients and health benefits.
Furthermore, there are more related tips, suggestions, and variants to the simple raita recipe. Firstly, preparing vegetable-based raita is an open-ended recipe. The raita can be made with any finely chopped veggies. However, ensure that you use 2-3 veggies and not more than that. Secondly, depending upon the end use of raita, you may vary the consistency of it. So you may have a watery or thin consistency for pulao and a thick one for paratha and roti. Lastly, adding or topping roasted jeera powder to yogurt is not mandatory. Yet adding it helps to flavor it and also helps with digestive problems.
